I usually use www.asiarooms.com, it shows you the cheapest > the most expensive, and seeing as you still have a week or so before you arrive, you'll probably be able to find a cheap nice place to stay for the night. Most places in Hong Kong will stay open until around 12 AM, after closing they'll have a machine which you can book yourself in, usually providing a code that allows you to enter you room.
Taxis should still be running, if the hotel is near the airport, you can cheaply ride in a taxi.

Yes, the airport cityflyer hk$33 runs til midnight so it'll still be running when you get out. If you miss it the airport express train costs 90hk$ but i never know where I am when iget into kowloon.it'll take you about 50minutes to get into kowloon probably faster at that time of night. I think the cityflyer is A21 and I KNOW it drops you off right across from the chungking mansions on Nathan road. I take the first bus out to the airport at 5:30 am from that very same spot. There will still be people hanging around outside the mansions with rooms to offer. You can of course go look at what they are offering and say no thanks if you don't like it... but do you really feel like doing that after a long flight? I have had to walk away from several, coming in late like you are. it was annoying. for twice the price you can walk ten meters down nathan road towards HK island and there's the Imperial Hotel right next to some Irish pub (i forget the name ... IT might actually be The Irish Pub) and the spaghetti warehouse. the bargain room is going to be 500 hk dollars and they ask for another 500 as a deposit that you get back when you check out. . but you get a free drink at said irish pub included.
I have found clean, quiet , and AC rooms in the mansions in August for 150 hk dollars. but you have to look and that was four years ago.

Chungking mansions etc are very low class accommodation.
It is on Nathan Road in Tsim Sha Tsui area.
Not recommended at all.
Why not try YMCA / YWCA ...etc ?
There are small hour buses but the ride is long.
After clearning the custom & bagage claim, it will be just before midnight.
If you take the Airport Express rail, which is fast to reach Kowloon Station,
you still need to catch a taxi from there.
because the normal connectiong buses and minibuses are not operating that late.
IF you do not mind the price, there is hotel near the airport.

8am - 6pm (Hong Kong standard time) daily. This may be expensive, though. Hong Kong has many tourism/visitor information sites. You may want to look for a hostel. I don't know how common they are in China, but they provide good, low cost places to stay in Europe.

I stayed in the Victoria Hostel in Hankow Road, Tsim Tsa Tsui, 10 years ago. Its situated above a dodgy girlie bar called the Wanchai. The hostel was run by a cantankerous Sri Lankan called Douglas. They have rooms and dorms and lockers to store your gear.
It is situated close to the MTR and cheap food outlets. There are a few bars close by - the Kangaroo pub and Ned Kelly's jazz bar (run by another old cantankerous Yank and a brilliant Filipino band who could play in their sleep).
Interesting and great fun and met loads of characters.
Depends what you are looking for.

its around HK$one hundred for the prepare from the airport to Kowloon station or Hong Kong station, and there are unfastened buses to considerable inns from there. even with the incontrovertible fact that (and extra value-effective!), get the bus from the airport to Kowloon for around HK$20
