Tomato and Garlic Pasta

There is nothing nicer than the flavor of fresh tomatoes. You can use canned, but the trouble you take to prepare this dish is worth it. You prepare the sauce while the pasta is cooking, no long hours of waiting. Great if you want meatless pasta.

Original recipe yield: 4 servings.

INGREDIENTS:
1 (8 ounce) package angel hair pasta
2 pounds tomatoes
4 cloves crushed garlic
1 tablespoon olive oil
1 tablespoon chopped fresh basil
1 tablespoon tomato paste
salt to taste
ground black pepper to taste
1/4 cup grated Parmesan cheese

DIRECTIONS:
Place tomatoes in a kettle, and cover with cold water. Bring just to the boil. Pour off water, and cover again with cold water. Peel. Cut into small pieces.
Cook the pasta in a large pot of boiling salted water until al dente.
In a large skillet or saute pan, saute the garlic in enough olive oil to cover the bottom of the pan. The garlic should just become opaque, not brown. Stir in the tomato paste. Immediately stir in the tomatoes, and salt and pepper. Reduce heat, and simmer until the pasta is ready; add the basil.
Drain the pasta, but do not rinse in cold water. Toss with a couple of tablespoons of olive oil, and then mix into the sauce. Reduce the heat as low as possible. Keep warm, uncovered, for about 10 minutes when it is ready to serve. Garnish generously with fresh Parmesan cheese.
VARIATIONS: Saute fresh quartered mushrooms with the garlic, or add shoestring zucchini along with the tomato.

I make two different "quick" pasta dishes for my kids who are 2 and 4 years old, and they luv to eat both:

Boil either a whole box/bag of small sea shell pasta OR elbow macaroni pasta, then drain.
Put the amount of pasta you are going to serve in a large bowl (the rest you can put in the fridge by placing them in individual sized ziploc/sealed plastic bags and use at a later time when you want to make more)...

Then add butter/magarine and parmesan cheese to taste into the bowl, then eat! (Example: For every 1 cup of pasta, add 1 teaspoon of butter/magarine and 1 teaspoon of parmesan).

OR, you can also add any SAUCE you like... either homemade sauce you might have frozen in the freezer that you've defrosted; or buy yourself a bottle of ready made sauce--my favorite is Paul Newman's Marinara Sauce, my husband prefers Classico's Four Cheese Sauce... but either way, you can mix the sauce into the bowl to taste.

If you're a big meat eater, then brown/fry some ground meat (1/4 pound for each person of either beef, turkey, or even sausage) in a separate pan and add to the bowl.

Quick Marinara Sauce
1/4 cup extra-virgin olive oil
1/4 medium onion, diced (about 3 tablespoons)
4 cloves garlic, sliced
3 (28-ounce) cans whole, peeled, tomatoes, roughly chopped
3 sprigs fresh thyme
1 small bunch fresh basil, leaves chopped
2 teaspoons kosher salt
Freshly ground black pepper

Heat the oil in a medium saucepan over medium-high heat. Saute the onion and garlic, stirring, until lightly browned, about 5 minutes. Add the tomatoes with about half of their juices (discarding the rest), the herb sprigs and basil and bring to a boil. Reduce heat and simmer, uncovered for about 25 to 30 minutes or until thickened.
Cook your favorite Pasta and add sauce
Serve with salad and some nice crusty bread!

Asparagus Portobello Pasta

INGREDIENTS:

* 2 (15 ounce) cans asparagus
* 1 (2.25 ounce) can sliced black olives
* 1/2 pound fettuccini pasta
* 1 tablespoon olive oil
* 3 large portobello mushrooms, sliced
* 1 (8 ounce) can peas, drained
* 2 teaspoons Italian seasoning
* 1 (6 ounce) can tomato paste
* 1/2 cup grated Parmesan cheese

DIRECTIONS:

1. Fill a large pot with water and the drained liquids of the asparagus and the olives; bring to a boil. Cook pasta for 8 to 10 minutes, or until al dente. Drain.
2. Meanwhile, heat oil in a large skillet over medium heat. Saute mushrooms, peas, and Italian seasoning until mushrooms are tender.
3. In a blender or food processor, puree asparagus, black olives, tomato paste and Parmesan. Transfer to a small saucepan, and heat through over medium-low heat. Spoon asparagus sauce over fettuccini, and top with mushrooms and peas.

HOMEMADE EGG NOODLES

EGG NOODLES:
3 cups flour
1/2 tsp salt
4 eggs, at room temperature
1/3 cup water

Put flour, salt and eggs in a large bowl. Using your hand, mix together, adding 1 tbsp water at a time and mixing until dough forms a ball.

Place dough on a well-floured board and knead until smooth and elastic, about 8-10 minutes. Cover and let sit for 15 minutes.

Cut dough into 4 equal parts; keep covered. Roll 1 part of dough at a time until desired thickness is reached (about 1/16th of an inch). Roll dough around rolling pin and slip rolling pin out. Cut in 1/2 to 1/8-inch strips and shake out on a towel to dry, for about 2 hours. While noodles are drying, make soup.

1 bunch green onions, chopped
8 cloves garlic, minced
8 sprigs fresh parsley
6 sprigs fresh thyme

2 quarts water

Pasta
Spaghetti Sauce in the jar - Ragu, Store Brand, Prego etc.
Ground Beef (Optional)

Follow directions on the package of pasta.
After you cook and drain add the sauce & beef.
Stir, mix well.
Eat & enjoy!!!

You can add veggies & cheese also if you like.

ummmmm... boil pasta water, add salt, add hard pasta. warm canned sause in saucepan. take out pasta when finished softening. strain out the pasta water. serve pasta with sauce.

Boil some water, throw in some noodles. when they soften completely (if you throw one at a wall and it sticks, their done.), strain out the water, dump them in a bowl and add some marinara. comes in a jar from the supermarket.
