With either knee, both knees and to blow most away...can even slide over to the passenger side and continue to drive from that seat.
Did this once for about 20 miles on an open interstate...talk about getting looks and making some just freak out. To see a car going down the road with no one in the drivers seat. Gotta love cruise control.

I do it all the time, but with only one. Using two throws me off. And I don't do it for long periods of time. I only do it that way if I'm talking on the phone and smoking at the same time. Or if I have to get a lid off of a drink for one of my kids or something like that. Don't get me wrong, I don't put my kids in any danger when I drive. I'm one of like maybe 2 people in my city (just kidding) that hasn't had an accident or a ticket. I'm a very conscious driver. If I wasn't, I wouldn't feel comfortable doing that.
