I'll assume you have a modular phone jack (RJ11), which has 4 connections, but the width is 6 positions (the outer 2 have no wires). These typically have red, green, yellow, and black connections. A phone only uses 2 wires, the middle 2, which are the red and green. Most phones don't care about polarity, but I will tell you the proper polarity anyway.

In the cable, you have multiple pairs of wires which could handle multiple phone lines. Blue/White is standard for line 1. If that isn't what is hooked up for some reason, you'd have to use a different pair. If you look at the other end of the wire you can see what is hooked up. In the Blue/White pair, blue goes to the Red on the jack, and White goes to the green. In some cables, the blue will have white stripes, and more likely the white will have blue stripes, to help associate them together.
