The phrase, "a full cup of coffee" implies that the cup is full of coffee. If the cup was indeed full of a water-based liquid like coffee, and the ring in actuallity did not get wet, there had to be some kind of barrier between the wetness of the coffee and the ring...
One answer suggested baby oil, another suggested a gerbil.
Your label for this question, "riddle" implies that there is a trick to the answer.
The only possibility, given that the cup was a "full cup of coffee", AND that the ring did not encounter any water or water-based liquid is that there was coffee in the cup, but no water- it was dry coffee- either whole beans, instant, or ground- without water or cream/milk.
