personally, this is a matter of words of god vs words of man... the sad thing even though people know some of the holy scriptures were manipulated by men's translations, rather than looking for truth, they just accept them for sake of convenience...

I was under the impression that men were the dominating sex in the times the bible was written.
"father" was a term of authority and respect, and not necessarily a description of sex, so to assume there would be a mother is to assume the text of the bible literally.
You can not pick and choose which passages in the bible are literal and which are not as you please.
I was being tutored for almost a year with a group of Mormons that came to visit me once a week. Strangely they were female, as i undertsand it is usually males that are sent, especially when teaching other males, but thats another topic.
i began to see contradictions in the Bible when compared to the Mormon bible. From what they explained, the two work together, as the Mormon bible is a "continuation" of the bible.
With some of the things I was shown, this is not true at all. But then again, it could be a denomination difference, such as the "rituals" fond in catholicism, and even some of the lesser followed beliefs in christianity (music is a sin etc).
Honestly, it matters not. Organized religion in general is a fallacy. God is not a building or a religion. God is God.
Believing in him and living your life the way you truly think he would want you to live it is all you need to do in my opinion.
I dont need a book, a building, or a room full of liars and deceivers to tell me how to love my God.

The Book of Mormon does not teach about our Mother in Heaven. That does not mean, however, that we do not have one. In fact, it makes sense that if we are all children of God, and He is our Father, that we would also have a Mother. Here's something to think about: why would God place so much emphasis on the family unit if He was just a single parent in Heaven?
There are many teachings of the Church of Jesus Christ of Latter-day Saints that are not found in ancient scripture. This is because the Church depends on the principle of CONTINUING REVELATION from God. Without it, the members of the Church would be left to interpret ancient writings on their own (this is what lead to the numerous sects of Christianity today).
Here are a few examples of teachings in the Church, issued by modern prophets of God, that are not found in ancient scriptures:
We should avoid pornography in all forms
We should avoid R-rated films
We should abstain from harmful drugs and tobacco
We should spend time together as a family at least once a week
We should prepare ourselves for emergencies
We should avoid debt, unless it is to get an education or to buy an affordable home
The 9th Article of Faith of the Church, written by Joseph Smith, states: "We believe all that God has revealed, all that He does now reveal, and we believe that He will yet reveal many great and important things pertaining to the Kingdom of God."

LDS doctrine do not weight entirely on one single scripture alone.
We read the Bible , Book of Mormon, Pearl of Great Price and Doctrine and Covenant, and like Brian said, also by constant revealation through a living Prophet.
By our doctrine, we are taught that for a man or woman to be exalted like God, Eternal marriage is require. Eternal progression is for husband and wife as a family unit. So it is not suprising to understand that we have Eternal Parents, a Eternal Father and a Eternal Mother
Jesus Christ him self taught that his Father is our Father also,
if there is no mother, then he could have just said creator, why bother using the term "Father".
From the begining of the Bible to the end, family are mention all over, and marriage between husband and wife is always there.

Implicit in the Christian verity that all men are the spirit children of an Eternal Father is the usually unspoken truth that they are also the offspring of an Eternal Mother. An exalted and glorified Man of Holiness (Moses 6:57) could not be a Father unless a Woman of like glory, perfection, and holiness was associated with him as a Mother. The begetting of children makes a man a father and a woman a mother whether we are dealing with man in his mortal or immortal state.
This doctrine that there is a Mother in Heaven was affirmed in plainness by the First Presidency of the Church (Joseph F. Smith, John R. Winder, and Anthon H. Lund) when, in speaking of pre-existence and the origin of man, they said that "man, as a spirit, was begotten and born of heavenly parents, and reared to maturity in the eternal mansions of the Father," that man is the "offspring of celestial parentage," and that "all men and women are in the similitude of the universal Father and Mother and are literally the sons and daughters of Deity." (Man: Origin and Destiny, pp. 348-355.)
This glorious truth of celestial parentage, including specifically both a Father and a Mother, is heralded forth by song in one of the greatest of Latter-day Saint hymns. O My Father by Eliza R. Snow, written in 1843, during the lifetime of the Prophet, includes this teaching:
In the heavens are parents single? No; the thought makes reason stare! Truth is reason, truth eternal, Tells me I've a Mother there.
When I leave this frail existence, When I lay this mortal by, Father, Mother, may I meet you In your royal courts on high?
Then, at length, when I've completed All you sent me forth to do, With your mutual approbation, Let me come and dwell with you.
Mortal persons who overcome all things and gain an ultimate exaltation will live eternally in the family unit and have spirit children, thus becoming Eternal Fathers and Eternal Mothers. (D. & C. 132:19-32.) Indeed, the formal pronouncement of the Church, issued by the First Presidency and the Council of the Twelve, states: "So far as the stages of eternal progression and attainment have been made known through divine revelation, we are to understand that only resurrected and glorified beings can become parents of spirit offspring." (Man: His Origin and Destiny, p. 129.)

This is something that we talk about, but there is no official declaration on the subject. consider it akin to the idea that Jesus had a beard. It's not mentioned that He did during his earthly ministry that he did, but it's pretty much accepted as fact.
Due to our understanding of God, we maintain that it simply makes sense that he has a wife. This is in large part due to our understanding of family. We believe that family units perpetuate throughout eternity. I believe that I will be married to my wife even after we die.
We also believe that when Jesus said "Be ye therefore perfect even as your Father which is in heaven is perfect", he meant that. Our mandate from Christ is to strive to reach a perfection somewhat akin to what God had reached. I don't mean that we're going to become his equals, I don't believe that's possible, but I do believe that if we live worthily, that we can attain a level of perfection similar to His.
So, if I get to be with my wife for eternity, and she has been responsible for most of the joy in my life, it seems to make sense that God would be privy to that same kind of joy.
