There are already a lot of good answers to this, so I won't repeat. BUT, how hungry was some poor soul when they figured out how to eat it???

LOVE LOVE LOVE artichokes!

boil for 30 minutes and peel off leaves, only eat the ends and even at that you just scrape off the "meat" from the ends -- dip in butter, lemon or mayo

or peel most of the artichoke off and bake

1. Remove outer leaves: After washing under cool water, snap off tough outer leaves close to the stem until you see pale-green layers.

2. Trim the top: Use kitchen shears to cut off the sharp tips from all exposed leaves; you will only need to trim about half an inch.

3. Trim the stem: Using a sharp paring knife, slice off enough of thick stem to form a flat base so the artichoke can sit upright in the steamer basket and on the plate.

4. To eat, pull off leaves one by one. Dip in sauce; scrape off fleshy part with your teeth. Then spoon out and discard prickly choke. Cut up the tender heart, and dip in sauce.

Steam it for 20 minutes, pull each leaf off, dip it in butter, and scrape off the soft part with your teeth. When you get toward the middle, you can just bite the base of the leaves off.
Once all the leaves are gone, scrape the fuzzies off the top cup shape, dip the stem & heart in butter and enjoy one lovely bite at a time.

Man, that sounds good.

steam it. (in a microwave w/water and some rosemary or basil is good covered w/ saran wrap).
then melt some butter for dipping.

Pull off each leaf and dip it in butter then scrape between front teeth. Throw away rest of leaf. When you get to the middle, cut out the soft Choke and eat it too.

Steam. remove outer leaves, dip in mayonaise... set front teeth on leaf, pull forward. Enjoy. Artichokes are why god made mayonaise.

put it in your mouth and then start chewing, when it is in small enough pieces, swallow...
and also try to do it w/out choking...
