It is very likely that our earliest ancestors (hunter/gatherers) classified plants. They would have to recognize plants they could use for food, medicine, and clothing. They may not be credited in the history books but if you are asking for the FIRST person to classify plants it would make sense that it was a very early human/group of humans.

More than likely Aristotle, then John Ray followed by Carolus Linneaus, since he published a book called Systema Naturae in 1758 scientist all over the world has accepted his system of Binomial Nomenclature.

Probably a monk but there were probably classifications attempted before the Catholic church was founded. In the library at Alexandria there may have been many books on classification but I guess we will never know.
