This is one of the easiest and good, too:
Ingredients:
2 cups cooked rice
2 Tbsp. Vegetable Oil
1 Tsp. Sesame Oil
1/2 cup sliced green onions or scallions
2 eggs, scrambled and cooked
1/4 cup soy sauce
Yield: 6
Directions: Cook Rice according to package directions, then let cool
Heat oils in wok or large skillet.
Add rice and stir fry for 4 minutes.
Add green onion and scrambled egg. Stir fry 2 minutes.
Add soy sauce, stir fry an additonal 2 minutes. Serve

here's a simple recipe...
2 cups of cooked rice (adjust the rest & the rice if u want more or less)
1 medium onion chopped
2 garlic chopped
1 red or green chili chopped (optional)
1/2 cup of frozen diced mixed vegetable or green bean, carrots, etc or any other fresh veges available
2 eggs already scrambled or u can break it up in the pan when cooking the veges & scramble them in it.
1 tsp dark soy sauce
1 tbsp oyster sauce (vegetarian if u have)
salt to taste
heat 2 tbsp oil & fry up the onions & garlic until soft & add chili if using them & stir for a few seconds. next add in the soy sauce & oyster sauce & mix well. add in the veges & stir till they r almost cooked then add in the cooked rice & eggs. mix it all till cooked & add salt to taste. that's it & it will take less than 30 mins. hope this helps =)

The key to making great fried rice is having everything chopped and ready to go, stir frying goes really quick!
Vegetable Fried Rice
Yield: 3 Servings
Ingredients
1 1/2 c quick cooking brown rice
2 tb peanut or veg. oil
1 sm yellow onion
1 sm red, yellow or green bell
1 pepper
1 ts bottled minced garlic
1/4 ts dried hot red pepper flakes
1 as desired
3 green onions with tops
3 tb soy sauce
1 c frozen baby peas
2 ts oriental sesame oil
1/4 c roasted peanuts for garnish
Instructions
Cook rice according to package directions, omitting salt. While rice
is cooking, heat oil in a large skillet or wok over medium heat.
Coarsely chop onion and add to skillet. Coarsely chop bell pepper
and add to skillet. Add garlic and pepper flakes. Cook vegetables 3
minutes stirring occasionally. Thinly slice green onion. Increase
heat to medium high and stir in hot cooked rice, green onions and soy
sauce. Stir fry for one minute. Add peas and stir fry for one
minute. Remove from heat. Add sesame oil and mix well. Sprinkle with
peanuts

i will give you a wonderful receipe for vegetable fried rice, you have requested for, which is called khichadi in marathi, an indian vernacular language, but also has roots in persian cooking as well. take two cups of small-grain but good quality ,aromatic rice, called either kolam or ambemohor, in indian stores, one cup of moong dal, i.e. lentils, 1 medium size potato, one big size potato, one tomato, two seedless brinjals, some tender french beans, a few flowers of cauliflower, fresh green peas, one carrot, garam masala powder, 2 green chillies, red chilli powder1 teaspoon, oil, some garlic buds, some ginger finely chopped, coves2or 3, black pepper seeds5or 6, one stick of cinamon, corinder for garnishing. wash the rice and dal separately, and soak moong dal for about half an hour. clean and cho all the vegetables, put brinjals in water after cutting so it won't change color, steam the vegetables half-cooked, chop onions, green chillies, not too fine, cut tomato. heat oil in an utensil for the rice preparation, put cloves, black pepper, garlic buds, green chillies, and then onions. stir till brownish,add cut tomato, stir, then add pre-boiled vegetables, stir-fry. drain the water from dal and rice, and put it on top of the masala and vegetables getting ready, stir for 5 minutes, pour hot water enough to cook the rice, sprinkle red chilli powder, garam masala and salt, cover with a lid, and let it cook over a medium heat. check in between, and stir alittle for equal spreading and proper cooking. when the rice is cooked, put off the stove and keep the utensil down, serve hot by putting a little desi ghee or butter on the top, garnishing with chopped coriander, some fried plain cashew-nuts, and along with any pickle, yogurt, and roasted papadam. you don't require any thing else, enjoy!

cook rice (white or brown) set aside.
cook frozen or fresh veggies in big saucepan with butter.
Add the rice into the saucepan with a little soy sauce.
Stir. Taste.
Add more soy sauce, stir, taste.
Repeat until spicy enough, then eat it.
