I LOVE avacados, but I'm frustrated I don't have more recipes for using them. What are some other ways you've tried to use them, and did it work? Work well? Go beyond the guac! :)

The most unique way I ever ate an avacado was when I took a trip to Bolivia. and on the menu there was avacado with chicken salad. when it came out it was a large avacado cut length wize (i only had one half) and the dip where the pit was the chicken salad. It was different but pretty good.

As a mexican well I just had some Enchiladas and you put slices of Avocado on top of your enchiladas and there great.
In mexico Avocado is more like a garnish on your dishes.
Tostadas, Enchiladas, Posole (Menudo) but the white menudo version, I put it on Sandwiches. And so on.
And it's a fruit and many think is a vegetable.
Guac , on Flautas, chips, and add it on many salsas.
On beauty well as a mud pack on my hair and face.
And there's a lot of stuff.
And it's actually consider a fruit not a vegetable.

Simplest is just to cut in half and fill halves with fat-free cottage cheese. I live on that in the summer. If you want to fuss a bit, cook burgers in a skillet with chili gravy/sauce, slice avocado on top of well-done burgers and add cheddar cheese and spoon sauce on top of that. Delicious!

I like to mix avocado with sweetened condensed milk (lots!) and crushed ice. Perfect summer treat..mmm..

Grill them...light sprinkle of salt/lemon....yum.. I but them on salads..with some spinach, chicken breast, grill few other veggies with it like zucchini, toss with some olives, mozz chesse. Great light summer meal.
