This is a past salad I learned to make when I worked at a deli. It's got a great flavor and is perfect for summer.
Super Macaroni Salad
1 16 oz box macaroni cooked,drained and cooled
1 1/2 cups good mayonnaise (Hellmans, Kraft's,etc)
1 cup white vinegar more or less
1 cup shredded carrots
1 large green pepper finely chopped
1/8 cup minced onion
1 cup sweetened condensed milk
1/2 cup sugar
Pour the macaroni in a large bowl, add the veggies including the onions, set aside. In a smaller bowl mix remaining ingredients, taste, it should have a nice sweet and sour flavor, add more sugar or vinegar until you like the taste. Then pour over the macaroni veggie mix, blend well and put in fridge until ready to serve.

cheese stuffed manicotti
NICK'S SPAGHETTI SAUCE
olive oil
1/2 pkg jimmy dean spicy hot sausage
1/2 pound ground beef
1/2 chopped yellow onion
1 small can mushroom stems and pieces, diced
1 large can hunts brand spaghetti sauce with mushrooms
1 large can hunts brand spaghetti sauce with meat
2 cloves garlic, peeled and cut on ends
Italian seasoning
2 bay leaves
1 dash salt (to taste)
1 dash sugar (to taste)
Heat some olive oil in bottom of a large kettle then, add sausage and beef together and brown meat.
Then add the chopped onions and the mushrooms and saute to cook down and remove excess moisture.
When the onions get transparent and have cooked down add cans of sauce and seasonings. Then reduce heat to a low simmer and cook till small boil point. Careful to stir continually so as not to burn the sauce on the bottom of pan.
Serve over your favorite pasta or use for manicotti or lasagna.

Pasta with Chicken and Peas:
Serves 4; Prep time: 20 minutes; Total time: 20 minutes
Salt and pepper
12 ounces fettuccine pasta
1 cup reserved Lemon Sauce (see Roasted Chicken with Lemon Sauce)
1 package (10 ounces) frozen peas, thawed
1 reserved cooked chicken half, skin removed, meat shredded (1 1/2 cups)
1 tablespoon cold butter
1/3 cup grated Asiago or Parmesan cheese, plus more for garnish, if desired
1. In a large pot of boiling salted water, cook fettuccine until al dente, according to package instructions. Drain; set aside.
2. Add lemon sauce to pot. Bring to a boil; reduce to a simmer. Add peas and chicken; cook until warmed through, 2 to 3 minutes. Stir in butter until incorporated.
3. Remove from heat. Add pasta and cheese; season with salt and pepper. Toss to combine. Garnish with more cheese, if desired.

Fettuccine Alfredo
2 cup heavy cream
1 cup butter
1 1/3 cup freshly grated Parmesan
1/2 teaspoon salt
1-1/2 lb fresh fettuccine, cooked and drained
Place 1-1/2 cup cream and butter in saucepan. Simmer until butter is melted. Remove from heat. Add noodles and toss. Add remaining cream, Parmesan and salt. Mix well. Return to heat for one minute. Toss and serve.

Someone said to me the other day that isn't it amazing it's always pasta now and not noodles? Anyway, I like to boil rotini, rigatoni or penne, then drain the water. I add butter, parmesan cheese and sometimes mushrooms and mix it all up. Just my own combo but I love it!
