There are some great books on this, especially for getting kids to eat veggies. The books have great pics that show you how to make faces out of vegies and just make them more appealing visually. There are hundreds of great-tasting vegies at your local farmer's market or grocery store. I like to try the new ones that I discover at the store!

A great snack that's high in fiber and protein is; a little peanut butter on celery. If you don't like peanut butter, try a little lite cream cheese.

Edamame: it's a soy product that kind of looks like whole peas, you can usually find it in the frozen section of the organic section of your grocery store. you store it in the freezer and thaw it when you want to eat it. it's already prepared and you just pops the insides out and eat those and throw away the pod.
Any kind of RAW veggies: peas, green beans, radishes, carrots, peppers, celery, brocoli, cauliflower
