First off, how does it smell? If there is an ammonia like smell, it has turned and won't be very good at best. At worst it can be toxic.

Seafood of all kinds should smell like the sea, fresh and clean.

Crabs of all species lose limbs from time to time, and like a lizard it grows back for some. The wound closes itself off and the nearby flesh turns black. This is not harmful, nor does it have flavor.

"Blue Crab" is actually several differing species and depending on the time of the year, will determine which is being harvested. Some of these species have very white flesh, while others are a bit mottled and even have very dark flecks. Again this is normal.

So, pay attention to the freshness of what you're eating and then start to determine which months you see the crab meat you prefer.
