Specifically, I'm looking for a graph of the pressure and temperature for water.

The pressure rating versus temperature for these classes of flange ratings is independent of the material being contained.

The best way to get a table or chart of the relationship between pressure and temperature is to contact a pipe, valve and fitting supplier in your yellow pages. If you can't find one, try the online yellow pages for Houston, Tulsa, Oklahoma City, Dallas or New Orleans.

The actual ratings are part of copyrighted documents published by ANSI and usually aren't available for free.

The pressure/temperature relationships for ANSI flanges (refer ANSI/ASME B16.5) varies depending on the material the flanges are made from. Most manufacturers will quote the base relationship which is for ASTM A105B and similar materials, but if it is important to maintain the maximum pressure rating at elevated temperatures, B16.5 lists alternative materials which can be used.
