Cherry Enchiladas
Submitted by: Brigantine
Rated: 5 out of 5 by 17 members Prep Time: 20 Minutes
Cook Time: 40 Minutes Ready In: 9 Hours
Yields: 5 servings
"Cherry Pie like you've never had it before! Cherry pie filling wrapped in flour tortillas, soaked overnight in a sweet liquid, then baked. I used to work at a bed and breakfast, and we would make this sometimes for catered luncheons. I added my own touch with the almonds."
INGREDIENTS:
1/2 cup water
1/2 cup butter
1/2 cup white sugar
5 (10 inch) flour tortillas
1 (21 ounce) can cherry pie
filling
2 tablespoons white sugar
1/2 teaspoon ground cinnamon
1 tablespoon crushed sliced
almonds
DIRECTIONS:
1. Grease a 9x13 inch baking dish. Combine the water, butter and 1/2 cup of sugar in a small saucepan and bring to a boil. Place a few spoonfuls of cherry pie filling just slightly off center of each tortilla. Roll up and place seam side down in the baking dish. Pour the hot liquid over the 'enchiladas' making sure to coat the tops completely. The mixture will be watery. Cover and refrigerate overnight.
2. Preheat the oven to 375 degrees F (190 degrees C). Combine 2 tablespoons sugar, cinnamon and almonds in a small bowl or cup; sprinkle over the top of the enchiladas.
3. Bake for 35 to 40 minutes in the preheated oven, or until outside edges of the tortillas are golden brown. Let cool slightly before serving.

Monkey Bread
4 regular cans biscuits
1 stick of butter
3 Tbs cinnamon
1 cup sugar
1 bundt pan
Mix cinnamon and sugar together in a medium sized bowl.
Cut each biscuit circle into 4 pie shaped pieces. As you cut pieces,
Place them in the bowl of cinnamon/sugar and coat them with it.
Next, put the coated pieces in an ungreased bundt pan.
Heat butter in a pan until melted. Add remaining sugar and cinnamon
mixture. Heat and stir until it starts to get bubbly and the sugar melts.
Remove from heat and pour mixture over bread pieces in the bundt pan.
Bake on 375 degrees for 15-20 minutes or until top edges start to turn golden brown and will pull away when gently touched. (Be sure not to pull any pieces
completely off though.)
For an extra special touch, sprinkle crushed/chopped nuts and/or drizzle a
Confectionery sugar frosting on top.
Easy enough for the kids to help make and everyone loves it!
So easy, a Monkey could do it!
Can either be sliced and served as you would a cake OR, and this is our fav way, put it in the center of the table and everyone pulls pieces off. It comes apart very easily and is make to be a finger food kind of dessert.

Strawberry shortcake!! It's simple to make and delicious to eat! Just slice up some fresh strawberries (or you can use already sliced frozen ones that have been thawed), add a tablespoon or two of sugar and refrigerate for a few hours. When ready to serve, dish strawberries into a store bought shortcake OR on top of a slice of Sara Lee pound cake (that's been thawed) and top with whipped cream! OR try a No-Bake cheese cake pie! You can get ones from the store in a box ready to make!

Buy a graham cracker crust. Slice up bananas in fairly thin slices. You can do two layers if you like. Then add a layer of blueberry pie filling (whole can) . Top with Cool Whip and chill.
It's so good and so easy.
