This is the fastest, best alfredo sauce:
1/2 cup heavy cream
1/2 cup butter (not margarine)
3/4 cup shredded parmesan
2 tablespoons chopped fresh parsley
white pepper to taste
heat cream and butter till butter melts. Add all other ingredients. serve. Its also really good if you add some sauteed garlic or just minced garlic.
makes 4 servings

Alfredo Sauce:
1 T oleo
1 T flour
2 small cloves garlic - minced
1 1/2 cups skim milk
2 T cream cheese
1 c grated parmesan cheese
2 t parsley
ground pepper to taste
1. Make a roux by melting butter then adding flour and cooking for a few minutes (until bubbly).
2. Add garlic and cook for one minute.
3. Add milk and stir until thick and bubbly.
4. Stir in cream cheese, parmesan, parsley and pepper. Stir until cheeses are melted.
This is delicious and using skim milk instead of heavy cream and lowfat cream cheese reduces the fat. Sometimes I substitute 1% milk (which is what we drink) and it works fine.

milk/cream + butter + parmesan, but also it helps to wisk in a little bit of flour into the milk to thicken it. look on allrecipes.com and search by "alfredo"
