I dont know for sure but I would have to say that the hired hands would be given the mosst dangerous work. Losing a slave would be like losing money,They didnt have workmans compensation insurance in those days.

Hired hands.
The owner wouldn't do it. The slaves were an investment that the owner would not want to risk. The overseer was the foreman, if you will. That leaves the hired hand.

Hired hands, Most were white and considered expendable by plantation owners. And don't forget 'indentured servants' , most of whom were also white.
