I believe coffee does cause anxiety because of all the caffeine in it. Stress, I'm not so sure of. I used to drink regular Folger's and had to stop, it was making me so jittery, I couldn't stand myself. Now I drink Folger's Half-Calf and I've definitely noticed a difference. I still get energy from the caffeine, but not too much energy.

Well, I don't think it's totally black and white! I think for most people, it's a stimulant which can increase the stress level but I also think some people are more prone to stress and anxiety and therefore coffee does enhance that.
Some people are not affected by cafeine at all.
I personally believe that because of the way coffee is grown and roasted, there are certain coffees that have worse side effects than others. For example, grocery store coffee to me is the worst, such as Folgers, Maxwell House, etc. Those are most likely grown in places where there's no regulation on types of pesticides or things of that nature that they use. Others are very high quality, grown in rich soil and grown organically. That's what I drink now. I definitely see a major difference between an organic verses non organic and a dark roast verses a light roast. Organic coffee is chemical free (with the exception of caffeine, albeit natural) and since it's a stimulant, you don't get a bunch of chemicals flowing through your blood stream along with the caffeine. Second, when the roast is dark, it changes the chemical reaction of the caffeine and can make for an unpleasant high. For example Starbucks. It's roasted so dark that it feels like you took speed!
So in essence, if you want just a mild wake up call, spend the extra money and get organic coffee and grind the beans yourself either at the store or at home. bzzz

Well, I know that I tend to get stressed out if I don't have at least one cup of coffee in the morning. It helps to me wake up and I also enjoy the time I spend relaxing while I'm drinking it. My old job was pretty stressful, coffee or no coffee - but that cup in the morning seemed to help me get through the day better. Then again, I get stressed out a lot, so who's to say that coffee isn't a contributing factor?
