Okay. Beef - a heavier red. Merlot is too fruity to stand up to most cuts of beef so you want a Zinfandel or a Shiraz/Syrah. Cabernet Sauvignon or Pinot Noir would also be good with beef.
Chicken - Chardonnay tends to work the best but you could try a Gewurztraminer or a Sauvignon Blanc as well. With chicken, you need it to stand up to the sauce or how you prepared the chicken and these whites tend to have more depth and complexity than some of the other white grapes.
Seafood - Lighter whites like Pinot Gris, Viognier and, depending on the style, Sauvignon Blanc. You want something light and crisp and clean when eating seafood. Rose wines tend to work very well with seafood but if you are going to do a Rose, try to get a European or Canadian rose rather than a White Zinfandel because White Zinfandel's tend to be sweeter and not overly complex.

Find a bottle of Root 1 Cabernet from Chile. It's made from a 100 year old vine that is still producing fruit and has never been grafted. Excellent ! Another one is Joel Gott Cabernet from California. A very big cab ! For Merlot, try Kenwood Jack London Merlot. It distances itself from Cabernet. Well worth the $24. For white wine, I would recommend Markham Chardonnay, $18.99, great legs! For chicken or fish, Ca'Montini Pinot Grigio from Italy. For dessert, try Bonny Doon Framboise, raspberry port in a 375 ml bottle .Fantastic with tiramisu! If you want better wine, don't choose a wine that's $6.99, go $10 and above. You will get what you pay for !

For chicken and fish- white wines
Sauvignon Blanc (Monkey Bay is good)
Chardonay (Lindeman's)
Beef- red wines. Depending on what cut/type of beef you are serving depends on what wine to serve with it.
For heavier cuts (like roasts) Red Zinfadel or Cabernets
For lighter cuts or steaks- Pinot Noir
However, you can serve whatever you like. You don't have to follow any rules. Life is too short to drink bad wine and to worry about what to serve!
You can check with a wine expert at a wine shop or the wine rep who is charge of the wines at the grocery store. They will be happy to give you advice about what to serve. They will ask you what your price range is and give you some suggestions.

Beef, you want Merlot, or another kind of RED wine. Fish and Chicken, you'll want a dry white like a zinfandel. Fish I generally have Chardonnay. Rule of thumb is the color of the meat, the color of wine.

If you can find Chilean wines in your area, they are almost always a good bet. Some of the best wines I've ever had are Chilean and they are very reasonably priced.
