Twice baked....my way!
After baking, cut in half and scoop potatoes out of skins...set skins aside.
Mash potatoes in bowl and add 2 Tbs. sourcream, some bacon bits and chives.
Spoon potato mix back into skins, tope with cheddar & monteray jack cheese, bake another 10 minutes or until cheese is melted.
Yum!
