It is because of the brown edges thing supposedly. We keep our lettuce wrapped in paper towels, sometimes layered, to prevent the leaves from turning brown prematurely. It's the water in the leaves that cause them to turn brown. Our lettuce is lasting much longer than before!

Chefs like to tear lettuce as they feel it is more appetizing served that way. I don't agree. I have always used a knife cutting lettuce to the bite size pieces as from self experience don't care to try to eat a large chunk of lettece when I pick it up. Besides, if your cutting lettuce for several people you look for time saving ways.
Think the knife bit is an old chef's line of BS.

The metal in the knife will make the edge of the lettuce turn brown. Be sure to tear it

when the knife cuts into the lettuce the silver sorta like spoils the lettuce which will make it turn brown fast

cutting it makes it easier for oxygen to get to the lettuce and turn it brown . but tearing is less severe on the cells.

The carbon in most knifes reacts with an enzyme in the lettuce and causes it to oxidize more quickly than if you tear it or cut it with a plastic knife.

It will turn brown guicker and some say causes it to be bitter, Tear or use a plastic knife.

I don't know the reason it happens but lettuce will last longer if you don't use a knife on it.

I didn't know it was bad to cut it. I always cut lettuce and I don't have any problem.
