It depends on where you want to hunt. How challenged you want it to be. The most widely distributed big game is the whitetail deer. It is very elusive and a master of its environment with escape routes already selected.
The largest and dangerous hunt is for moose. They are large smart have a keen sense of smell, excellent eyesight and very poor sight. They are mostly found in remote areas.
If you want to challenge your shooting the antelope is a very small target and most shots are taken at long ranges. This prairie dweller won't jump over a fence even though it could preferring to crawl underneath.
Mule deer look hilarious when you break them out of a bush. With their ears flopping back and forth and a bouncing run that makes them hard to shoot.

I love hunting whitetails. Sitting in your treestand, if you have a gun or not, and a big buck walks up underneath you, that is the best adrenaline rush I have ever had.
I would like to try to hunt bear. I used to have a dog that we wanted to train for bear, but he's gone, now. I think the bear adrenaline rush would be even bigger. I love that feeling more than (almost) anything else.

In my opinion it is whitetail deer, of course that's the only large game I've hunted besides wild hog, which is also fun to hunt but not as challenging.

If we put aside all the moral scruples associated witth killing for the sport of it, then clearly, the most challening hunt would be to bag an equally skilled and armed human.
Think of the fairness. You versus a hungry, clawed, toothed tiger at thirty yards compared to someone who could also reach you at the same distance.
Might give you a little respect for your prey.

mountain goat by far is the most challenging. elk can be a heck of a rush if you hunt them in the rut and bugle for them. the most haunting sound i have ever heard and when they come in they are very agressive. i have shot 2 at under 20 feet with thier heads down and charging in thick brush.

i think the best big game it defiantly elk. they are much like hunting deer...but in packs and they taste really good
