If you're looking for a non-alcoholic substitute, there are several alternatives, depending on your preference: white grape juice OR apple juice OR apple cider OR chicken broth plus lemon juice OR clam juice (in seafood recipes) OR water.

Hope this helps!

First of all why don't you want to use white wine? If it's because of the alcohol don't worry it burns off when you cook with it. You won't get drunk. If it really concerns you use a non-alcoholic wine.

Use any fruit juice. I see quite a bit of recipes with orange and honey. You can also use grape or apple juice, lemon juice or lime juice.
Balsamic vinegar, apple cider vinegar.

The key in substituting wine is to add a bit of tartness and subtle sweetness to the recipe. Experiment and make the dish unique to your preferences, that's the joy of cooking, making it yours.
