Broiled Grouper Fillets with Romesco Sauce
For romesco sauce
1/3 cup whole blanched almonds, toasted
1 slice firm white sandwich bread, crust discarded and bread torn into pieces
2 large garlic cloves
1/2 teaspoon dried hot red pepper flakes
1/2 cup coarsely chopped drained bottled roasted red peppers
2 tablespoons red-wine vinegar
1/2 teaspoon salt, or to taste
1/4 cup extra-virgin olive oil
4 (6-oz) pieces grouper fillet
1 to 2 tablespoons olive oil
Make sauce: Finely grind almonds, bread, garlic, and red pepper flakes in a food processor. Add roasted peppers, vinegar, and salt, then purée, adding oil in a slow stream. Season with black pepper.
Make fish: Preheat broiler.
Put fish on a lightly oiled shallow (1-inch-deep) baking pan, skin sides down. Brush fish with oil and season with salt and pepper. Broil 3 inches from heat, without turning, until just cooked through, about 7 minutes.
Makes 4 servings. Good luck!

Our favorite way to eat grouper is very fast and easy. I buy blackened seasoning and sprinkle that on both sides of the fish and saute in a skillet with a little extra virgin olive oil. Its good on a roll for a sandwich also with some lettuce and tomato.

I can tell you that grouper is as good as it gets, I have never baked it , but I have cut it in ti small chunks and fried it ,, OUT OF THIS WORLD Season with Tony Chachere's, and a little extra garlic powder,, roll in a 50 50 mix of corn meal and flour,and deep fry until it floats ,,, man it's good !!!

They are great for rissotos!! First wash some Tilda rice ( 2 cups is enough for three people) and leave to one side.After scaling and cleaning, wash and cut into several serving size pieces. Sprinkle a little salt, little black pepper and any other spice of your choice like a teaspoon of curry powder. Fry in a little cooking oil till brown on both sides and partly cooked. Put aside on plate. Fry one large onion cut into slivers in medium sized pan using a little oil with which you fried the fish . When onion is almost red, add a little chopped parsley. Add half a tin of mixed chopped carrots and peass Mix. Then add enough warm ( prepared before hand) water to cover fish, add 1-2 teaspoons of salt. Let it simmer till fish is ready.. doesn't take long. Water will lessen a little. Preheat oeven meanwhile to medium heat. Add rice to pan and leave on low heat till you see rice has soaked in a lot of water and showing . Put in oven till cooked . If it needs a little more stock , just add some. You can also decorate this with grilled slices of aubergines.

grouper is one of my favorite fish. tender & sweet.
brown both sides set it aside.
use shrimp fat, garlice, red curry on low heat
put in bamboo shoots (strings type) and baby corn.
season it.
put in the fish that you'd precooked
ad in basil & sliced jalepenos
additional seasoning
cover and simmer for 3-5 mins.

get some MCcormick deep fry mix ,your choice of flavors. if you make the fillets about an inch&ahalf thick,deep fry at 350 to your shade of brown.Dip dont smear into a sauce of choice.so simple & so good.
