Alfredo is a sauce made from heavy cream, butter, parsley, and minced garlic. It is most often served on fettuccine noodles.
A popular variation to Alfredo uses an Asiago/Parmesan/Romano cheese combination. Optionally, a cup of flour may be added to a large batch of the cheese mix so it thickens up more quickly, instead of needing to add extra cheese to absorb some of the light fluid. This helps the Alfredo maintain some of the creamy texture without adding an excessive amount of cheese. Adding flour does reduce the flavor of the sauce significantly.
Conversely, one can create an especially rich Alfredo by using plugra butter and Parmigiano Reggiano cheese instead of normal butter/margarine and parmesan, and leaving out the cream entirely. Because of the butter and heavy cream, Alfredo is considered by some to be one of the least healthy sauces.

With my experiences, working with multiple italian chefs, the key flavors that you are looking for is parmesan cheese and black pepper. But one thing that I have come to find that really makes an outstanding alfredo sauce is Chicken Base. After you have made the sauce, add a little and stir it in to taste. It really brings out all the flavors and adds a little something extra that some people just aren't sure what it is.

Alfredo Sauce
1/4 cup butter
1 cup Parmesan cheese, grated
1/2 cup heavy cream
Garlic (I use 2-3 cloves, you don't want too much!)
1/2 to 3/4 cup Mushrooms
Sauté the mushrooms and garlic in some of the butter. Melt the rest of the butter, and remove from heat. Stir in the cheese and the cream, as well as the mushrooms and garlic if appropriate, and bring it just to a boil over low heat, stirring often. Toss with warm noodles and serve.

Easy Alfredo Sauce II
INGREDIENTS:
1/2 cup butter, room temperature
3/4 cup grated Parmesan cheese
1 cup heavy cream

DIRECTIONS:
In a medium bowl, beat butter and Parmesan with an electric mixer until fluffy. Add cream, a little at a time, until mixture resembles softly scrambled eggs. Toss with hot pasta to serve.
