i work on the phone, helping people, people say "I appreciate it" and i don't know wether to say you're welcome or thank you

I'd go with "thank you" as it is a bit more humble.

I have always heard "'preciate ya" used as a substitution for "thanks" (and always jokingly except once in Northern Canada - where it was said seriously...) - though I have to admit my first impression would be to say thank you when someone tells me they appreciate me!

It's sort of a thank-you with a built in compliment, isn't it? Maybe I would say "Thanks - glad I could help!" Again, both a you're welcome and a thanks in return.

I think it would be more appropriate to say "thank you", as their appreciation is a compliment to you.

i appreciate you is improper grammar. the correct substitution for i appreciate you is thank you, so when rephrased the answer is you're welcome.
