sausages are held in shape by a thin skin....when you cook them,,the insides expand, and the skin doesnt always stretch equaly and so they curl.
try pricking the sausages with a fork in about a dozen paces as you are cooking them,,,this will help relieve the pressure.

As most of you have mentioned, the intestinal skin used does cause contracts, as do the interactions between proteins. But there is the fat component, too. Fatty components become smaller, causing curvature to happen. Then one should also think of when the butcher (or otherwise) is in the process of making the strings. They'll (butchers) put the strings into loops as well, as it makes storing easier. You'll notice not all sausages curl up, but most do, aye.

This only happens in sausages which have intestines as their 'skin'. The reason it curls is because the intestines are curved naturally when they are in the animal. When it is not cooked the skin is longer and thus does not curl. As the skin shrinks when it cooks it reverts back to its natural curve.

the casing shrinks, causing the sausage to contract. You can prevent this from happening if you put a slit n the sausage, but that will also allow all the yummy juices to escape.

because they use water to pump them up to look all appetising, so when you cook said sausages, all the water evaporates, leaving you with a curled up sausage.

sausage is made of meat whichis made of protein which is made of molecules. when you heat protiens some of the bond angles between parts of the molecules lessens, and thus one side is shorter causing it to curl

it has skin that is diffrent ingridient, or you just fries it with small amout of oil so the heat is not evenly spread
