I know that pistachios are sorta kinda greenish, but I think whoever developed pistachio ice cream went a little overboard.

Ok... I KNOW they add coloring to it and I KNOW that pistachios are green. What I wanna know is why do you think developers choose to make it so unnaturally green instead of just leaving it as it is? Only one person had a decent answer so far and i'm giving u another chance!

I've made homemade pistachio ice cream, pureeing the pistachios in a blender, and it was basically a cream color - only the very lightest hint of green. Others have found that it turns a light green. It depends on the pistachios you use, apparently.

However, when you're putting flavored ice cream out in a display, like at an ice cream shop such as Baskin & Robbins, you need to be able to identify it by sight. Eighteen different "white" ice creams just don't look interesting. Since pistachios ARE green, that's the color they added. That's what people expect when they buy pistachio ice cream, so most manufacturers still add the green coloring.

By the way, homemade is WAY better.

Coloring is added...If you get Ben and Jerry's Pistachio,Pistachio ice cream it is white not green and their ice cream is a natural as you can get!

Like people's hair, nowadays food can be whatever colour the manufacturer wants it to be including pistachios that are greener than pistachios.

i think that when you puree the nut oil comes out and intensifies the colour that's just my opinion not fact . but how green is it where you come from i ve not seen it really dark . i live in Scotland UK

It may be due to added color for fantastic look so I think its coloring only because almost in every flavor some addition is done because without it color not freely comes out.
