I have been a vegetarian for almost 10 years, but now I am trying to incorporate chicken and maybe fish into my diet. Since I've never made it I'm scared I will undercook it. What's the easiest way to start?

I always cook my chicken breast this way:
Take a sheet of foil & spray with cooking spray
Season chicken breast (lemon pepper is good) & put on foil.
Fold the foil so the edges meet & then fold them together.
Now fold in the ends of the foil.
Place on a cookie sheet on bake in the oven @ 325 degrees for about 1hour.
When cooking the chicken this way it won't dry out & it nice & it's nice & tender.

I only ate poultry and fish for almost 14 years. I finally incorporated Beef and pork into my diet 3 years ago...funny, I had a craving for it, when I was pregnant! LOL! I think to start off, the best way to make sure your chicken is done, is to boil it in water with lite salt and onion until you see no pink. You can then take the boiled chicken and grill it, bake it, sautee' it, put it on salads, and even fry it, if you wish. Boiling the chicken ensures that it is completely done, and when done with Lite Salt and White Onion, doesn't make the chicken taste bland. Oh, by the way the boiled chicken will end up being very tender.

I don't have a grill, so the best way for me to cook either a chicken breast or a fish fillet is to wrap it inside some foil with lemon juice and seasoning (salt, pepper, garlic...etc/wahtever you prefer).
Heat the oven to 350 degrees. When you've reached that temperature put the wrapped foil in the oven for about 20 minutes. It usually takes about 25 minutes total to cook but I have to keep checking because my oven is really old so the temperature is not very well regulated. It also depends whether you have a gas or electric oven. Yours might take less time than mine.
Make sure to use lots of lemon/lime juice so that the meat is moist.

i would steam the chicken you can buy very inexpensive steamers that fit over a saucepan or an electric one . The good thing about the electric ones is that you usually get more than one tier and you can cook your veg or rice etc at the same time as the chicken . Make sure you cook the chicken until the juices run clear from the thickest part ,when you stock a skewer in to it

The healthiest is to bake or boil chicken breast, lots of protein, very little fat. Season with Mrs. Dash or whatever to taste. You can microwave it for a few minutes first (not too long or it will be rubbery). Cut it in the middle, after baking at 350 for about half hour or more, and if all the pink is gone, your good to go.

Healthiest ways are broil, steam, poach, or BBQ. If you are afraid of under cooking, purchase a meat thermometer, they have the temp each type of meat, poultry or fish should reach to be done. Remember, if you have been a vegetarian for 10 yrs, eating chicken will tear your stomach up for a while until your body starts producing the enzyme to digest it.

Do a vegetable stir fry with very little olive oil and just add in some small pieces of chicken to start with since you are incorporating fish as well you could toss in a handful of shrimp if you want as well. Shrimp take very little time to cook so save those until the very end.
