you will need some parts that are not easy to find
1/2 # lamb heart
1/2 # lamb liver
1/2 # lamb lung
1/2 # lamb spleen
1/2 # lamb kidneys
1 med onion
3 cloves garlic
salt / pepper
1/2 # scotch oatmeal (rough ground toasted oats)
2 oz scotch whiskey
1 sheep stomach or large intestine intact to stuff
put every thing but the oats in a meat grinder and grind coarse. knead in the oats, stuff firmly into casing. poach carefully in water just under the boiling point for two to three hours, fish it out put on a platter and slit the casing open along the top to serve, scoop out the cooked sausage and enjoy.

I am Scottish/Irish, and as far as I am concerned there is no good recipe for haggis.....its disgusting. But if you must know.....the traditional way it is prepared is with sheep kidneys, liver, lungs, and sometimes heart, minced up very fine, add raw oats, some spices (salt, Pepper, whatever you like really) stuff that whole mess into a sheeps stomach (sometimes called tripe), tie off both ends, and boil until done, then cut open the bloated thing, and scoop out whats inside, and enjoy......if you can.
See, I was right as Debbie B pointed out.....and it would take a lot more than a wee dram to get me to eat that stuff

hello iam from scotland and i love haggis not to live up to the stereotype or anything !!!! Haggis is made from sheep's liver heart , lung , etc mixed with oatmeal and a certain blend of spices that i cant go in to . Traditionally it is stuffed into a sheep's stomach but you can get synthetic ones now . you can also get a veggie haggis now as well but i feel that defeats the purpose !!!! Haggis is best served with potatoes and turnip ( neaps and tatties ) and a wee dram o' whiskey to wash it down yummy !!!!
