It's not the soda itself, it is the hissing sound the can makes or a bottle makes when opening it. To them it sounds like another cat hissing at them that want to fight.
Don't tease your cat with the bottle or the can, it will only make matters worse. Eventually he or she will realize it is not in danger and will come to you willingly.

Well, since we know it's not a specific kind of soda leaving a sour taste in your cat's mouth, hehe, I would say it has something to do with the can. Have you tried drinking soda out of bottles and seeing what they do? I have a feeling they think the can is weird. For instance, my cat didn't like brushes. It would stare at it and creep up to it very carefully and then bat at it really fast with it's paws like it was a porcupine or something. If I dared to pick it up the cat would be gone lol. So I'm assuming it just doesn't like something about the can . . but they may not like the crackling of carbonation either from a can so putting it in the bottle would silence that when you put the top on and maybe it'd be better (unless of course they remember when it DID make noise and are forever scared)
Try the bottle method . . do they do anything if it's in a regular glass?

There may be some classical conditioning going on to do with their behaviour (similar to Pavlov's dog). If for example they experienced something unpleasant to do with soda (i.e. getting bubbles fizzing in their face and nose) they then associate this unpleasant condition with soda. Here is an example scenario: Owner opens can of soda and cat hears the noise of the can opening. Cat sniffs at can of soda while owner is out of room. Cat find fizzing, scent of soda unpleasant. Everytime cat hears sound of soda can opening or sound of pop fizzing, cat associates it with that unpleasant experience and reacts accordingly.

It's the crinkling noise the aluminum cans make.. Cats are very sensitive to that. They don't like it. Get an empty coke can and crumple it... and watch your cat and see what she does.. I believe she is conditioned to hiss and run away whenever she sees a can...

If you listen really close you can hear the bubbles making little noises in the can. Cats have better hearing, so maybe it's really loud and annoying to them.

they probably can here it fizzing in the can, and that probably scares them. my cat paprika started sniffing around my sprite oonce, so i poored some in my palm for her, and she stuck her nose in it, and went into a sneezing fit, it was cute, but now she wont go anywhere near full soda cans, lol
