Season chicken with salt and pepper. Heat 2 tablespoons of vegetable oil in a skillet. Add onions and cook until soft. Add mushrooms. Put onions and mushrooms in another dish off to the side. Keep warm. Cook chicken thoroughly. Top chicken with the onions and mushrooms. This would taste good with rice or potatoes on the side. Sorry. . .I wouldn't know where to add the canned tomatoes.

If you have spices at all then sautee the mushrooms and onions together add the spices and tomato. Put chicken in a dish add sauce that you created. Bake at 400 for 30-45 min temp chicken to above 165

Put the chicken, mushrooms, and onion in a pan with some butter, margarine, or a a bit of oil, and sautee it until lightly brown.
Add the tomato and a little water. Let it simmer for about 5-10 min. Add a little salt and pepper to taste. Enjoy! Oh, yeah, and if you add too much water, don't worry, grab a spoon and enjoy it as a soup! ;-)

Do you have flour?
If so then make a small roux.
1 cup flour and one cup cooking oil.
Heat oil and stir in flour slowly and cook until the color of a copper penny.
When brown enough add two cups water and season with
salt and pepper.I use cajun seasoning.
Then chop up onion and add to mix also tomato.
Cook covered on medium to low for 1/2 hour stirring occasionally to prevent sticking.
Prepare chicken while stew is cooking.
either debone first or put chicken in covered pot and steam or boil and then debone.
Don't throw out the liquid.
Add chopped chicken and liquid(aprox 1-2 cups max) to
cooking stew also add mushroom.Don't add them any earlier.
Cover and simmer on low for 1 hr.
Server over rice or potatoes or if you haven't either bread or bisquits go well with this.

That could make quite a nice meal. Cook the chicken and the onions and the mushrooms until everything cooked, add the tomatoes and cook and maybe add mixed herbs such as oregano maybe coriander, maybe a little bit of chilli powder and you have got yourself a meal. That aint bad for a 16 yr old is it? Ha ha

Saute your onions and mushrooms in some butter, brown your chicken then put your chicken in a caserol dish with the onion and mushroom mixture on top, add the tin of tomate on top, bake and enjoy.

I like this. Add your mushrooms and coarsely-chopped onions after sauteing chicken, then move forward w/ the chicken broth adn lemon juice. Capers are optional. Save hte tomatoes for another dish.


** CHICKEN PICCATA **

2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
2 cups all purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped

Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
In a large 10 or 12-inch skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.

Reduce heat to medium low and add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

This'll use it all. You can add the shrooms, or keep them for later, too. Great soup!

** Chicken Tortilla Soup **

4 Tbsp. vegetable oil
1 medium onion, chopped
2 large cans diced tomatoes
6 cups chicken stock or broth
1 Tbsp. ground cumin
2 Tbsp. chili powder
1 Tbsp. chopped garlic
1 (15 oz.) can enchilada sauce
1 Tablespoon chopped cilantro
2 teaspoon chopped green chilies
1 teaspoon Worcestershire Sauce
1 cup corn tortilla, cut in thin strips
1 cup shredded cheddar cheese

Saute onions in a large saucepan in oil until transparent. Add tomatoes and cook, stirring often. Add rest of ingredients, except tortilla strips and cheese. Simmer, stirring occasionally, about 30 minutes. Add tortilla strips and heat about ten minutes.

Serve with additional crispy tortilla chips and cheese.
