Summer Tomato Salad
This recipe is great ending to a hot summer day.
Original recipe yield: 6 servings.
INGREDIENTS:
1 pint cherry tomatoes, halved
1 pint yellow pear tomatoes, halved
1/4 cup chopped green onions
1 clove garlic, minced
1/4 cup chopped fresh basil
1/4 cup chopped cilantro
freshly ground black pepper to taste
ground red pepper to taste
salt to taste
DIRECTIONS:
In a bowl, toss the cherry tomatoes, yellow pear tomatoes, green onions, garlic, basil, cilantro, black pepper, red pepper, and salt. Refrigerate 30 minutes and toss again before serving.

HERE'S SOME RED, WHITE, & BLUE 4 YA!!
July 4th Cold Cream Cheese Pizza Squares
The Red: Roma tomatoes cut in slices, and pepperoni slices
The White: 1 already prepared pizza crust
The Blue: Take a container of softened cream cheese, add blue food coloring to it, and mix together.
Spread the blue cream cheese mixture on the prepared pizza crust. Lay the pepperoni slices on top, alternating with the roma tomatoes. Refrigerate overnight, and cut into squares in the morning. Enjoy!

Is not too spicy but is a plentiful cabbage and potatoes give this dish a satisfying Old World Flair. My family and friends love this cabbage skillet, even those who never liked cabbage before I made this, but now they do!
Kielbasa Cabbage Skillet
1 pound fully cooked kielbasa or polish sausage, cut into ½-inch slices
4 tablespoons butter, divided
1 large head cabbage (4 pounds), coarsely chopped
2 medium onions, chopped
3 cans (8 ounces each) tomato sauce
½ cup sugar
1 tablespoon paprika
3 to 4 large potatoes, peeled and cubed
In a large deep skillet or Dutch oven, brown the sausage in 2 tablespoons butter; remove and set aside. In the same pan, sauté the cabbage and onions in remaining butter until onions are tender.
Combine the tomato sauce, sugar and paprika; pour over cabbage mixture. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. Add the potatoes and reserved sausage. Cover and simmer for 30 minutes or until potatoes are tender. Yield: 8-10 servings.

Bake a cake! Make an american flag cake. Use white icing then decorate with strawberrys for the stripes and blueberrys for the stars!! I made it last year for a bbq. Just stick it in a cooler on the way there and your good to go.

This cake is so ....moist and easy to make. Pig Out Cake 1 box of yellow cake mix 1 small can (11oz) of mandarin oranges, undrained 1/2 c. oil 4- eggs Icing: 12-16 oz Cool whip (I use 16 oz) 1 lg. can crushed pineapple, undrained 1 sm. pkg. instant vanilla pudding Combine cake ingredients and mix well. Bake in rectangle pan at 350 degrees for approximately 30 minutes or until inserted tooth pick comes out clean. Combine icing ingredients and spread on cooled cake. Cake does need to be refrigerated until ready to serve. * I sometimes add flaked coconut to the icing mixture.

A Dessert Pizza is good. I have used the following recipe and changed the fruit to strawberries and blue berries. You could also use raspberries.
1 (18 ounce) package refrigerated sugar cookie dough
1 (8 ounce) container frozen whipped topping, thawed
1/2 cup sliced banana
1/2 cup sliced fresh strawberries
1/2 cup crushed pineapple, drained
1/2 cup seedless grapes, halved
--------------------------------------------------------------------------------
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Press cookie dough evenly into a 12 inch pizza pan. Bake in preheated oven for 15 to 20 minutes, until golden brown. Cool in pan on wire rack.
Spread whipped topping over cooled crust. Arrange fruit in a decorative pattern. Refrigerate until ready to serve.

Blueberry Sauce used to drizzle over white cake:
2 cups fresh blueberries
2 cups sugar
1 tbsp. cornstarch
1 tbsp. cold water
1 tsp. nutmeg
2 tbsp. lemon juice
combine sugar, nutmeg, and lemon juice in a medium sized pot. Bring to a boil stirring occasionally.
In a small bowl mix together cornstarch, and water until liquidy.
Add cornstarch mixture to pot, simmer over low heat for about 5 minutes, or until sauce is clear and even.
Drizzle over Angel Food Cake, top with strawberries for a Red, White, and Blueberry treat!

1 PKG WHITE CAKE MIX
½ TEAS BLUE FOOD COLORING
½ TEAS RED FOOD COLORING
1 CAN VANILLA FROSTING OR MAKE YOU OWN
RED WHITE AND BLUE SPRINKLES
WHITE CUPCAKE LINESE SO THE COLORS SHOW THROUGH
PEPARE CAKE BATTER ACCORDING TO PACKAGE DIRECTIONS. IN A SMALL BOWL, COMBINE 1-1/3 CUPS BATTER AND BLUE FOOD COLORING. IN ANOTHER BOWL COMBINE 1-1/3 CUPS BATTER AND RED FOOD COLORING. LEAVE REMAINING BATTER PLAIN.
FILL PAPER LINED MUFFIN CUPS WITH 2 T. RED BATTER, 2 T. PLAIN BATTER AND 2 T BLUE BATTER. BAKE AT 350º FOR 20-24 MINUTES OR UNTIL A TOOTHPICK COMES OUT CLEAN. COOL FOR 10 MIN. BEFORE REMOVING TO WIRE RACKS TO COOL COMPLETELY. FROST WITH VANILLA FROSTING DECORATE WITH SPRINKLES. 1-1-½ DOZ
