Chicken and Rice
Get 2 lb of boneless chicken, diced (skin or no skin)
1/2 onion diced
1/2 c sliced mushroom, if you want
1/2 c frozen veggies (fresh is ok too but not canned)
2 c of long grain rice.
1 can cream of mushroom soup
In a big skillet on med/high heat, add 1 tsp oil and sautee the rice, and onions, and fresh mushrooms for 3 minutes or until rice starts turning white. Turn heat to medium
Add to the rice, the cut up chicken and cook for 10 minutes.
Add 1 can of soup and then add 1 1/2 can of water. Carefully mix well, and add the frozen veggies. When the contents start to bubble, turn heat to low. Cover and cook for 30-40 minutes or when chicken is cooked and the liquid has absorbed from rice.
The rice should be tender when you taste it. If not, add 1/4 cup more water (if the water has evaporated) and cover, cook for an additional 10-15 minutes.
Feeds 3-4

Here is something I taught all three of the boys.
tortilla soup
1 can rotel
2 cans chicken and rice soup
1 can tomato soup
1 can water
cheese
tortilla chips
In a dutch oven (that's the pot that has handles on two sides)
put all the liquid ingredients in heat to a boil and then turn off the stove.
Get out bowls for however many people you are feeding. In each bowl put cheese (about 1/4 cup) and break up tortilla chips and put then in the bottom of the bowl as well. with a ladle put soup into bowl.
Easy and good.

Here's a super-easy tuna cassarole recipe:
You'll need a box of pasta (whatever your favorite shape is - I like rigatoni the best), at least one can of tuna (more if you're a big tuna fan), and one can of cream of chicken soup.
You'll also need a pot to boil the pasta in, a colendar to strain the pasta, a can opener, and something to stir ingrediants together with (wooden/plastic spoon).
Optional stuff: parmesean cheese and an oven-safe cassarole dish.
Here's what you do:
*Cook the whole box of pasta.
*Drain it and put it back in the pot you cooked it in.
*Open the cans of tuna and cream of chicken soup and dump them both in.
*Mix the whole thing up.
You've got dinner! :)
If you want, you can put parmesean cheese on the top - I think it tastes great, but not everybody likes it.
You can also put the whole thing (after everything's mixed together) in a cassarole dish and bake it at 350 degrees until the top gets golden-brown (try 10-15 minutes, but keep an eye on it - all ovens are different). Baking it makes the top crispy.
Anyway, it's a great, easy recipe that tastes wonderful and is even good warmed up if you have left-overs.

DUDE, DON'T TRY ZIPLOC OMELETTES!!!!!!!! Holy crap in a bag batman!!!
Taco Salad is good:
1 pound ground round, cooked and drained
1 taco seasoning mix
lettuce
tomato
shredded cheese
black olives, optional
salsa
sour cream
doritos
Make the meat, add the seasoning packet and follow those directions. Cool a bit. In a large bowl combine the doritos, cheese, onions, tomatos, lettuce and meat. Mix this all together and serve with sides of salsa and sour cream.
You can add anything you like on tacos to this. You can also make it with chicken. You could buy the already cooked chicken strips and cut into pieces and the taco seasoning will work just fine with it.

A good pasta can be quite easy, buy a bag of noodles and cook seperately.
Seperately heat up a bottle of mushroom & tomatoe pasta sause which already comes ready in a jar, add a tub of mushrooms, salt & pepper and let simmer for about 5 minutes .
Dish up pasta with sause on top, sprinkle parmesan cheese on top and serve with a salad and store brought garlic bread.

If you want to make a good easy meal for your family you can easily put together a salad, pop some frozen garlic bread in the oven, boil some pasta (either speghetti or tortillini from barilla is good) and toss it with some speghetti sauce. Get some ice cream for dessert and viola! a great dinner :)

Try ZIPLOC OMELETS. I just received the recipe and they turned out great!
If you have a group, have everyone write their name on their Ziploc freezer bag with a permanent marker, so they don't get mixed up. First crack 2 large eggs into the bag (no more than two), shake to combine them. Then you can have a variety of ingredients such as cheeses, diced ham, chopped onion, chopped green and/or red pepper, chopped tomato, cooked crumbled bacon, or salsa, etc. Each person adds prepared ingredients of choice to their bag and shake well. Make sure to get all the air out of the bag and then zip it up. Place bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more than that just make another pot of boiling water. Open the bags and the cooked omelet will roll out easily. Be prepared for everyone to be amazed. Nice to serve with fresh fruit and coffee cake. You can even make up the bag(s) the night before, leaving them in the refrigerator until your ready to cook them the next morning.

Peanutty Butter No-Bake Cookies
1 cup sugar
1 cup corn syrup
2 cups peanut butter
4 cups of your favorite cereal (Special K, Corn Flakes, Rice Krispies, Cheerios)
Combine sugar and corn syrup. Boil for one minute. Add peanut butter then add cereal. Drop one at a time onto waxed paper with a spoon to form a "lump". Let cool on counter or in fridge.

for a dinner, try making a chicken salad with different toppings.
for dessert, lemon bars are really easy to make and look nice too
[you dont have to use an electric mixer, they turn out fine if you just stir the ingredients]
