when i ve made noodles they are really bland, apparently you have to boil the noodles for a bit then add them to a hot wok then apparently the magice ingredient is Rice wine Vinegar- it gives them that particular taste- i cant explain it- but like you've brought it from the chinese take away!

I don't know what the noodles you like taste like, but I like to cook chinese ,and I have a basic set of ingredients that I start with :
Gently fry a clove of chopped garlic, add some fresh chopped ginger ,soy sauce (real brewed stuff is best ),and for best effect, alittle sherry and a chopped spring onion.
Another tasty approach is just to brown a chopped onion in a little oil , then add a little water and soy sauce. This works well with lightly steamed chinese leaves, noodles, or bean sprouts, or all together.
For that chinese takeaway effect you could also add just a couple of drops of toasted sesame oil.

The easiest way is to use a ready made sauce (my favourite is Blue Dragon which comes in foil packs). Stir fry the meat and/or veg then add the sauce and leave on a low heat. Boil the noodles, drain and add a dash of soy sauce before adding the stir fry.

See if there is an Oriental grocery store near you. That would be your best bet. Or down the "international foods" aisle at a regular grocery store. Soy Sauce, Oyster sauce, Chinese garlic sauce (hard to find but really good on steak too), etc. Good Luck. Its not easy but there's always takeout.

If you're in the UK, Oxo do a Chinese flavour stock cube.
Boil your your noodles up in water with the stock cube added.
It's actually quite good.

As in Taiwan here, I've learned that heaps of MSG, weeks-old oil and other unnameables are your best bet! Chinese take-outs base their recipes on the fact the with enough MSG, any other flavors can be hidden with only the important ones being brought through.. ha ha

ngredients:
* 1 pkg. very thin spaghetti
* 1/4 c. chicken broth
* 2 tsp. chives
* 2 tsp. soy sauce
* 1 tsp. honey
* Dash of ginger
* 2 tsp. rice vinegar (optional)
Directions:
1. Cook spaghetti according to package directions. Cool.
2. Add 1/4 c. chicken broth, 2 tsp. chives, 2 tsp. soy sauce, 1 tsp. honey, dash of ginger and 2 tsp. rice vinegar (optional) in a small pot, cook over low heat until blended well.
3. Pour over noodles and refrigerate. Serve cold. Before serving sprinkle with sesame seeds and chopped scallions.

buy lots of chinese seasonings & condiments...oyster sauce, soy, sesame oil, shao shing cooking wine, stir fry sauces, etc..and use a chicken broth, and cornstarch to thicken sauce before you place on top of noodles...
