I eat a lot of yams, [baked in the oven], and they are always orange in color. But today when I cut it open to mash it, it was light yellowish. It still tasted good, but it was different in consistency and taste. Is this a yam or did I get something else by mistake?

This is what is marketed as a sweet potatoe.
Yes it is different in texture and color. I believe it has a higher starch content which is why it has that different texture.
