You can make lots of great food on the campfire if you bring along some aluminum foil. Rosemary potatoes: Cut 2 large potatoes into 1" cubes (or slices) slice 1 onion into wedges, crush 1 or 2 cloves garlic. Put ingredients onto large sheet of aluminum foil. Sprinkle generously with salt, pepper and rosemary. Fold foil into packet, leaving one end open. Add 1/4 cup water and then seal packet. Place near fire or on grate over coals. Cook for about 20-30 minutes.

Quick Campfire Chicken: Use any parts you like, but the best "camp" flavor comes from bone-in chicken. Use about 2# chicken, 1 large onion, 1 medium can crushed tomatoes, 2 cloves garlic (crushed), add celery or other veggies as desired. Use a large sheet of aluminum foil to make your cooking packet. Add all ingredients and season with salt, pepper, and any other spices you like. Tony Chachere's Seasoning is a favorite but this also works well with italian spices. If you want a complete meal, make more than one packet and add rice and extra liquid. One last bit of info for you!!....... A good cast iron griddle or skillet is great to use on either a campfire or the grill. In Texas you can buy something called a comal which is used by many Mexican people to cook tortillas and other southwestern foods. I found a good quality griddle/comal that I use mostly on the grill for anything from eggs to tacos but I also like to take it along on camping trips. You'll find you can use it for all your cooking needs---even brewing coffee in an old school percolator pot. I hope this is useful to you!!

here is the best and easiest, get some top sirloin steaks and cut into 1"inch aprox cubes and marinade with "Yoshidas" brand teriaki sauce in a ziplock freezer bag.this can be put into a freezer and frozen if you are goung backpacking.

cut all peppers and onoins about same size as meat add pineapple cubesand juice and put into seperate ziplock freezer bag with some "yoshidas" teriakki sauce.

when you are ready to eat then build a campfire or start your BBQ and assemble mixture, nix the meat and other ingreadients to allow flavors to mingle * soak squewers in water for 10 minuts before assembly. then cook on till done turning as required.

no dishes or leftover mess just the ziplock bags

I don't go camping often, but if I did, I think I could not survive without a few things I could count on not to go bad on me, like cornuts or nuts in general. I would also like to have lifesavors around! I guess that is sorta a lame list, but that is all I could think of at the moment!

You can make these hobo dinners wrapped in foil. You take a hamburger patty, onion, carrot, potatoes, whatever veg you like and season it and seal it up real good. Then you throw it right in the fire for 15 minutes, preferably just on top of the white embers. Be careful taking it out and you have dinner in a little packet. One for everyone!
Oh, and beer of course.
