Spicy Avocado Salad
Yield: 8 Servings
2 Avocado; cut in half
1 Red onion; cut in slices
1 Tomato; cut in slices
Salt; to taste
1 Lime; cut in half
1 Jalapeno peppers; diced
Jalapeno pepper slices;
-optional
Fresh cilantro; chopped fine
Lettuce
Cut avocado in halves.
In a big bowl. Place sliced tomatoes, red onions, jalapeno peppers, and
lettuce.
Sprinkle with lime juice, salt and pepper. Toss.
Add avocado on top and a few more jalapeno pepper slices if desired. Toss
gently.
Serve.

Mexican Salad
1/2 avocado, ripe and diced
1/2 bunch cilantro, finely diced
1 tomato diced
1/4 c cabbage, finely shredded
1 cup pasta, cooked, chilled.
diced celery/onion,
1 jalapeno, finely diced with seeds removed, optional
mayo
salt/pepper to taste
In a large bowl
Add the cilantro, tomato and avocado.
Add the celery / onion, jalapeno dash of salt/pepper.
Add the cabbage and 2 -3 tbsp of mayo or just enough to moisten to your taste.
Chill for at least 1/2 hour- mix before serving and serve cold.
Serves 2-3

Spicy Shrimp Avocado Salad
3 ripe Genuine California avocados
2 Cups cooked shrimp
½ Cup fresh lemon juice
½ Cup diced celery
4 ripe tomatoes
1 Cup diced cucumbers
2 tsp salt or to taste
2 garlic cloves
2 jalapenos
1 Cup fresh cilantro
4 green tomatillos
6 tostada shells
Instructions
Cut up shrimp in good size pieces and place in a medium bowl
Add fresh lemon juice and let it stand for about 5 minutes
Dice avocados, 2 fresh tomatoes, celery and cucumbers add to shrimp
Cover and chill in refrigerator for 15 minutes
Prepare salsa as follows:
Boil remaining 2 fresh tomatoes, 4 green tomatillos and jalapenos for about 10 minutes
Rinse and place in blender, add garlic cloves and cilantro and salt to taste, about 1/2 tsp
Add salsa mixture to your shrimp and avocado salad, mix all ingredients well and serve on tostada shells.
Avocado Salad
Spicy Dressing (recipe follows)
2 ripe avocados
2 small tomatoes
1 cup pitted black olives
1 head butterhead lettuce
Cut avocado in small pieces and tomatoes in wedges. Place in a medium bowl along with the olives. Pour the salad dressing on and mix lightly. Marinate for at least ½ hour in the refrigerator. Serve on a bed of lettuce.
Spicy Dressing
½ cup olive oil
juice of 1 ½ lemon
2 tablespoons tomato paste
1 teaspoon salt
1 teaspoon chili powder
½ teaspoon ground cumin
pinch of black pepper
Place all the ingredients in a blender, and blend on a low speed for a minute.
Serves 4.

if you don't want it like hot hot...or if you don't want jalapenos then try this recipe....but you can replace the butter head lettuce with...some other kind of lettuce
