The White Dove is the antique symbol of
Venus , the Greek goddess , and is a Masonic Symbol so to speak to remember the day Noa let the Dove and never returned,
Genesis 7 , 11-12.
It is also the Symbol over the top of the Coat of Arms of Pius Pope XII.

You know your question was real cute but the real answer if you are interested is that the dove is the peace symbol because God made it rain for 40 days and 40 nights continually and that made the earth flood. He had Noah build his ark and take on two of each creature(back then). After the rain stopped Noah would send out the dove to look for land or any signs of it. One day the dove brought back an olive branch-hence their was a tree somewhere so there had to be land. So that's why they made the dove the peace symbol.

I believe the answer is that Noah (as in Noah's Ark), after it stopped raining, Noah sent a dove out into the sky. It came back with an olive branch in it's mouth. This was a sign from God that the rains were over and once again Peace reigned over the Earth.

Because a dove is white, you can mix birds and call some thing else a dove, but in real it's a mutt not dove.
the color white is defined as - pure, positive, and good .....
So because the Dove is all white, and the color of white is all good, they felt it was the animal of choice to declear peace.
