G.I. stands for Government Issued. because during WW1 everything that the military were allowed to carry with them was issued to them by the government from their mess kit to their underware. All stemming from the need to ration the resource's at home for the fighting men. everything was geared to support the men in battle and was literally issued by the government and the allies said that the US armed forces were all Government Issued which was shortened to G.I.

GI stands for Government Issue. This reverts back to military law which says that all military personnel, like the bunks they sleep in, the clothes they wear, and the guns they carry, are the property of the Government. What started as a common joke among soldiers that they were, in fact, Government issued military property, became the standard ready reference. They were, quite simply, issued by the government and, therefore, Government Issue.

Appended to the American soldiers (by UK women) upon arriving in the UK during WW11. On being asked about there cloths they said it was all standard government issue!
Wildly infatuated the UK ladies named them GI's remarking that, hopefully, not everything was standard?
