To make about 10 - 12 pizzas

Dough
2-1/4-Cups Water
2-Tsp Granulated Yeast
1-1/2-Tsp Salt
3-Tbs Vegetable Shortening
2-Beaten Eggs
6-Cups Flour - Will have to add some more

Mix yeast in warm water and let stand for 10 minutes. Add balance of ingredients and work by hand adding extra flour until dough is no longer sticky. Form into ball and let stand at room temp for 1 hour.

PIZZA UNOS DEEP PAN CHICAGO STYLE PIZZA

FOR THE CRUST:
1 cup warm tap water (110-115 degrees f)
1 pkg active dry yeast
3 1/2 cups flour, divided use
1/2 cup coarse ground cornmeal
1 tsp salt
1/4 cup vegetable oil
FOR THE FILLING:
1 lb sausage, removed from the casing and crumbled
1 lb mozzarella cheese, sliced
2 garlic cloves, minced
1 (28 oz) can whole tomatoes, drained and coarsely crushed
3 tsp dried oregano (or 5 fresh basil leaves, shredded
4 tbsp freshly grated parmesan

TO PREPARE THE CRUST:
Pour the warm water into a large mixing bowl and dissolve the yeast with a fork. Add 1 cup of flour, all of the cornmeal, salt, and, and vegetable oil. Mix well with a spoon. Continue stirring in the rest of the flour 1/2 cup at a time, until the dough comes away from the sides of the bowl.

Flour your hands and the work surface and knead the ball of dough until it is no longer sticky.

Let the dough rise in an oiled bowl, sealed with plastic wrap, for 45 to 60 minutes in a warm place, until it is doubled in bulk.

Punch dough down and knead it briefly. Press it into an oiled 15-inch deep dish pizza pan, until it comes 2 inches up the sides and is even on the bottom of the pan. Let the dough rise 15-20 minutes before filling.

Preheat the oven to 500 degrees.

TO PREPARE THE FILLING:
While the dough is rising, prepare the filling ingredients. Cook the crumbled sausage until it is no longer pink, drain it of its excess fat; set aside.

TO ASSEMBLE AND BAKE:
When the dough has finished its second rising, lay the mozzarella cheese over the dough shell. Then distribute the sausage and garlic over the cheese. Top with the tomatoes. Sprinkle on the seasonings and parmesan cheese.

Bake for 15 minutes at 500 degrees.

Then lower the oven temperature to 400 degrees and bake for 25 to 35 minutes longer. Lift up a section of the crust from time to time with a spatula to check on its color. The crust will be golden brown when done. Serve immediately.

Basic Pizza Dough
Recipe courtesy Emeril Lagasse, 2004

1 cup warm water (105 to 115 degrees F)
1 (1/4-ounce) envelope active dry yeast
1 teaspoon honey
2 tablespoons extra-virgin olive oil
3 cups unbleached all-purpose flour
1 teaspoon salt
Yellow cornmeal, for sprinkling the baking sheet

In a large bowl, combine the water, yeast, honey, and 1 tablespoon of the olive oil, stirring to combine. Let sit until the mixture is foamy, about 5 minutes.

Add 1 1/2 cups of the flour and the salt, mixing by hand until it is all incorporated and the mixture is smooth. Continue adding the flour, 1/4 cup at a time, working the dough after each addition, until the dough is smooth but still slightly sticky. You might not need all of the flour. Turn the dough out onto a lightly floured surface and knead until the dough is smooth but still slightly tacky, 3 to 5 minutes.

Oil a large mixing bowl with remaining olive oil. Place the dough in the bowl, turning to coat with the oil. Cover with plastic wrap and set in a warm place, free from drafts until doubled in size, about 1 1/2 hours.

You can make pizza dough yeasted or from sour dough. Yeasted : flour, salt, eggs, honey, oil. for 12 cups flour use 1/4 cup oil and 1/4 cup honey. 3 eggs and 4 tablespoons of salt. yeast 2 tablespoons. also , for every 3 cups use 450 millileters of warm water. take 1 cup of the water out and add 2 tablespoons of yeast to it. let it activate. add the salt t the flower first and mix it in then add the water,eggs, oil, honey and at last the cup of water with the yeast. kneed this for 5 mn then put your dough in a greased bowl. let it rise then punch it down. cut your dough and roll it out. make your pizzas, ram them in and out of the oven @ 350 degrees and youll be cookin. have a good one, Ammo
ps make sure you put the salt into the flower first before the yeast or you will kill the yeast. If you do kill it you can jump start the dough by mixing the same amounyt of yeast in warm water, add it to the batch and mix it in. Then it will rise.

well i guess pizza comes with different ingridents in different states.. in new york
pizza is made with flour, water tepid warm, yeast, little sugar, little salt, wine drop, and a smidg of oil.. the secret is to keep your dough in a warm place and cover it with a towel....always rub the sides of your pot with oil so it won't stick when its rising..let it rise for 1and half hour , punch down rise again 35 minutes and wallllahhhhh the best pizza dough around.. i do hear that water is a factor in the dough from state to state..
