It helps them make the girl jealous (or see if this kind of thing even bothers the girl). It lets him talk about how he's in high demand by other women. It's a game to see if he can get to the girl. Also, if he's insecure its another way of reaffirming that he is wanted, not just by these girls he talks about, but also by the one he's talking to about these women. By the way, if he says these things to a girl he's with to prove he's not involved with other people...its usually just a cover for why he really wants to talk about it. If its a girl he's not involved with, he may say it to make her jealous and want him.

Answer well covered by the others already:
-- Insecurity
-- A game to make you jealous.
Actually these two options, amazingly enough, amount to the same thing.
He might be wanting to see how you'd react and to make you jealous, even to push you into having sex with him if you haven't already, but that in itself suggests he is insecure about where the relationship stands.
A real man does not remain insecure about such things or play games, he gets to the truth. Once he knows the truth, he remains secure and trusts it, until he picks clear signals to the opposite.
But the world is chock full of full grown boys these days and a whole lot of women are girls who still can't see what is a ploy is.
If you've just had an argument with him or been giving him no attention, he might just be whining and trying a last ditch attempt to get you to recognize him. But that's still whining and still a boy's approach. Most men would do one of two things:
1) Modify the time they put into the relationship in order to either sweeten the pot , if insecure in how it is going, or to increase distance to see if you notice and/or care.
2) Communicate in some ways their concern or desires for more contact as this is more important than saving face.
Boys on the other hand, will play games like this because they don't realize the importance of a real relationship and they care about seeming attractive to women. Men realize that it's a turn off to most women in committed relationships for you to instigate or mention other women period.
If he is a weak but good man, he may be trying to inform you that there is a huntress out there who may be setting him up for gossip and try to gain him by sabotaging his relationship with you. The more calmly and quietly he states this when beginning, the higher the likelihood, in my mind, it is that this is a possibility. But in such a case he would not be selling it as his being attractive. He might bail out to make it seem that way if your response it not helpful or observant, but in any case he still should be dealing with it successfully on his own.
The way you described this, I'd assume this is at best late high school, perhaps a small chance college aged boyfriend-girlfriend thing. In such cases, these things don't tend to realistically last anyway, when such exchanges are already coming up.
A man wouldn't be telling you this, partly because he'd know that any women worth his long-term attention wouldn't give him the light of day if he went on about it.

Because he is terribly insecure. How sad. Some people have no sense of self worth and thinks saying things like that make him seem more appealing. Think twice and get to know him alot better before this goes any further.

Sometimes people just want to talk. Maybe he feels he can trust you enough that he can talk about this with you without YOU getting insecure. I see he was wrong.

He may feel like you don't desire him anymore and he's trying to let you know he's still a good catch. Either that or he is full of himself.
