We love to cook out and are always looking for a good marinating reciepe for the meat. Can any one give me a good reciepe?

The best meat marinade that I have found is Dales Seasoning. I have only been able to find it a Wal-mart. It is excellent!!

This is a delicious marinade. The seasoning that he suggests making is sold in stores, so you don't have to buy all the different ingredients. But if you have them all on hand, then go ahead and make it. It's a great seasoning. You won't be disappointed in this recipe. It's my favorite. And it's pretty easy.

Emeril Lagasse Live's recipe for grilled marinated flank steak...

1 (2 to 3 pound) flank steak
1/2 cup dry Sherry or red wine
1/2 cup soy sauce
2 tablespoons Creole seasoning, recipe follows
2 tablespoons minced garlic
2 tablespoons brown sugar
1 tablespoon tomato paste
1 teaspoon freshly ground black pepper

Place the flank steak in a large, plastic resealable bag. In a 2-cup measuring cup combine the remaining ingredients. Pour the marinade mixture into the bag with the steak, seal and marinate in the refrigerator at least 4 hours and up to 12 hours in advance.
Preheat a gas or charcoal grill. Remove the steak from the marinade. Pour the marinade into a small saucepan and bring to a boil. Lower the heat to medium-low and simmer the marinade for 10 minutes. Remove saucepan from the heat and keep warm. Place the steak on the grill and cook to desired doneness, about 6 minutes per side for rare. Transfer the steak to plate and let stand for 5 minutes before carving. Cut the steak across the grain into thin diagonal slices, and serve with the marinade sauce.


Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Combine all ingredients thoroughly and store in an airtight jar or container.
Yield: about 2/3 cup

This is no great idea or anything, but I really love to marinate my steak and chicken in Italian Salad dressing. The oils in it really flavor the meats and it is also good to use what's left in the pan to pour over a baked potato served with your steak. It is very simple to do (because a chef, I am not!!!) There is also a really good seasoning for the grill made by Durkee called "Grill Creations - Citrus Grill" It is fantastic on chicken. I have only been able to find it at Sam's Clubs. Hope this helps.

6 ounce pineapple juice
1/4 cup packed brown sugar
1/3 cup cider vinegar
1/8 cup soy sauce
1/3 cup catsup (or Barbecue sauce)
1 teaspoon ground ginger
1-1/2 teaspoon honey or liquid smoke

Combine all ingredients. Add with meat to a large shallow dish or to a large zip-lock bag. Refrigerate over night. Remove meat and cook. If you wish to use marinade as a baste; boil it for 10 minutes in sauce pan or microwave first.

I would hate to try to choose a Best Answer from these responses. You all are some great chefs!

For steaks, I like to do homemade rubs, and let them sit over night. One that I did recently for rib eyes:

Cut two garlic cloves in half
Rub them all over the steak
Coat both side lightly with either fresh peppercorns (black or green have hefty flavors) or Lawry's Seasoned Pepper
Very lightly sprinkle with coriander (or your season of choice)
Cut a red onion into quarters
Place the steaks, garlic cloves and onion in a plastic baggie overnight

It's a rub, not a marinade and I do recommend changing a few things.

1. Don't use a skirt steak. They tend to be tough.
2. Easy on the salt. Use 1 teaspoon instead of 1.5.
3. Maybe add a pinch of brown sugar.

I bought a large sirloin once and let it marinate overnight and part of the next day until dinner time in A-1 sauce and some garlic salt in a ziplock bag and it was fantastic!

SPICY STEAK MARINADE
2 tbsp. prepared yellow mustard
1/4 cup worcestershire sauce
1/4 cup soy sauce
1/2 tsp. minced garlic (1/4 tsp. garlic powder)
1 tbsp. minced onion (1 tsp. onion powder)
1/4 tsp. red pepper flakes
1/2 cup water to thin marinade

Combine all ingredients and mix well. Place steaks in ziploc baggie and pour marinade overtop. Allow to rest for at least two hours, preferably overnight for best flavor and tenderness.

Whatever you use, just make sure it has a low sugar content. A lot of sugar in the marinade can cause the outside of the food to burn quickly without cooking the inside.

A friend of mine recently told me that she always marinates her steaks in soy sauce. I haven't tried it yet, but I bought steaks so I could. She really brags on it.
