I am looking for something new to cook. Anyone got any good ideas and the way to cook it...NO SEAFOOD please...Thanks

I like to make garlic citrus roasted chicken breasts. Easy and yummy. Use 2-3 Split breast (bone in). Place in oven safe pan. In large glass measuring cup put 1 stick of butter, 2-3 minced garlic cloves, the juice and zest from 1 orange. Place in microwave and melt. Pour over chicken. Season with salt & pepper and poultry seasoning. You can put a few extra whole cloves of garlic in pan if you want. Put in oven at about 325-350. Bake until chicken reaches 175-180 internal temp (about 45 mins - 1 hour). Baste it once or twice while it cooks. If there is not enough liquid during cooking, add a little broth or water. Remove from oven and cover until you serve.
This also works with a whole chicken. Just stuff the center with an orange, and follow above recipe

Get some fresh chicken breasts, cut it up. Coat it with an egg/water mixture, roll in bread crumbs and bake 30 minutes at 325 degrees.

If you're real lazy, get some shake n bake type coating, and coat the fresh chicken with that mixture. Tastes just as good.

While the chicken is baking, make some fresh mashed potatoes.
If you have a microwave its super easy.
In a microwave safe bowl, add 2 potatoes, washed and cut. Peel if you wish. Poke a few holes in it with a fork.
Fill the bowl with water, put in microwave, cover with saran wrap or waxed paper, microwave on high for 8 minutes.

When the potatoes are done (fork should slide easily into it), carefully drain the water. If you do not have a potato masher, use the fork and break the potatoes down until you can mash it. Add a splash of milk, a gob of butter and a dash of salt. Mix well. For creamier potatoes, add more milk... but not too much milk or it'll turn mushy. Let the potatoes sit 5 minutes before serving.

Then for veggies, you can serve fresh veggies (ie: corn on the cob, carrots) or frozen or canned.. whichever you prefer.

Awesome Chicken and Yellow Rice Casserole
Prep Time:30 MinutesCook Time:1 Hour 30 MinutesReady In:2 Hours 15 MinutesServings:8

INGREDIENTS:
1 medium onion, coarsely chopped
1 medium green bell pepper, coarsely chopped
1 (8 ounce) can water chestnuts, drained and chopped
2 tablespoons olive oil
1 whole chicken
salt and pepper to taste
seasoning salt to taste
1 (10 ounce) package yellow rice
1 (4 ounce) jar diced pimentos, drained

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a Dutch oven, toss the onion, green bell pepper, and water chestnuts with olive oil to coat. Rub the chicken with salt, pepper, and seasoning salt, and place on top of the vegetables in the Dutch oven.
Cover, and cook the chicken 1 hour and 15 minutes in the preheated oven, or to an internal temperature of 180 degrees F (85 degrees C). Remove from heat. Leaving the vegetables in the Dutch oven, remove the cooked chicken, cool, skin, debone, and shred meat.
While the chicken is cooking, prepare the yellow rice according to package directions.
Mix the shredded chicken and cooked rice into the Dutch oven with the vegetables. Return to the 350 degrees F (175 degrees C) oven, and continue cooking 15 minutes before serving.

~Sweet-Sour Bratwurst Skillet~
2 Tbsp brown sugar
"" vinegar
"" water
1/2 tsp prepared mustard
1/4 tsp salt
1/8 tsp garlic powder
dash pepper
Combine in skillet. Add
8 oz sauerkraut, drained
1 med apple cored and cut into wedges
1/4 c chopped red and or green pepper
2 Tbsp sliced green onion
Score 4 fully cooked smoked bratwurst or Polish sausage links
by making slits at 1" intervals, almost to the opposite side and place atop mixture.
Cover and simmer for 15 minutes.
Sprinkle with parsley, if desired. Serve with hot mustard, potatoes, rye bread...
Makes 2 servings.

Chicken Philly Cheesteaks -- saute onions and peppers, add some fresh, cut-up boneless, skinless chicken breasts, when it's all cooked up, put some provolone cheese all over it, let it melt then put it on some delicious, freshly baked rolls!!!!!! Or over rice with some au jus....you want to talk about something goooooooddddddd....this is it!!!!!! Hope you like it.
