Does anyone have a tasty low-carb meatloaf recipe? No breadcrumbs or cracker crumbs, etc. Also, it needs to be low-sodium, if possible. Thanks!

I can't use the pork rind recipe - there is far too much sodium in those.

Tomato Topping:
1 (8-ounce) can tomato sauce
1 (6-ounce) can tomato paste
1/4 cup sugar substitute (recommended: Splenda)
2 teaspoons white vinegar or water
2 pounds ground chuck or meat loaf mix with ground pork
2 eggs
1/2 cup grated Parmesan
1/4 cup red onion, diced small
1/4 cup roasted or fresh red bell peppers, diced
2 tablespoons chopped fresh parsley leaves
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 pound prosciutto, or any type of ham, thinly sliced
1/4 pound provolone cheese, sliced


Preheat oven to 350 degrees F.
In a small bowl, mix together the tomato topping ingredients. Set aside. Add a few drops of water to thin to a ketchup consistency.

In a large bowl, mix together the beef, eggs, Parmesan, vegetables, herbs, and seasonings.

Working on a waxed paper lined sheet pan or counter, form meatloaf mix into a 10 by 8-inch flat rectangle on the waxed paper. Place a layer of prosciutto slices on top, followed by a layer of provolone slices. Roll up the stuffed meatloaf mix like a burrito and seal the edges all around by pinching the meat.

Glad you asked. I'm on that Low-Carb diet and love meatloaf. So tried making it with bbq pork rinds. It it great! Just took a bag of pork rinds and crushed them up and used in place of bread crumbs. Takes a little longer to cook, because the consistency isn't the same. (Use 1 egg instead of 2). But it was wonderful!
I enjoyed it some broccoli and cheese and just pigged out.

While I won't say that I actually have a meatloaf recipe, this is what I do for my low-carb meatloaf.

Besides the usual things to put into the meatloaf (I also add shredded taco cheese to the meat before baking it). The cheese actually takes the place of breadcrumbs and the like.

I also double up on the veggies inside of the meatloaf (extra onions and celery).

Sometimes I will also add a bit of A-1 Steak Sauce to the mix.

take ur recipe and buy all the ingredents that are carbfree and sugar free ,u can get every ingredent u want to be sugarfree and carbfree, ketcuhup, mustard, crackers, bread, barbeque sauce, peanut butter jellies,,name it, u can find it carbfree and sugar free
