You know what? I think simple is the best. I just saute in extra virgin olive oil with a tablespoon of butter (no-salt butter if you're watching your sodium). The butter keeps the olive oil from smoking (make sure your heat is not too high). If you can find Cavendar's Greek Seasoning, sprinkle a little of that on each side of the breast before throwing them in the pan. Cavendar's does contain salt, but there are a few no-salt greek seasonings out there - just read the labels.) The butter will also make tasty little brown bits in the pan, which are very yummy and increase the flavor of the chicken.

This recipe is unique. Very tasty and healthy. It's a recipe from Greece. Try it.

Greek Chicken Breast

For one person you will need:

1 Whole Chicken breast (boneless)
1/4 Cup feta cheese (it's a greek type cheese you can use also gruere)
1/4 Cup green pepper chopped
1 Slice mozzarella cheese

Directions:
Grill the chicken breast until done. Put the mozzarella cheese on top of the chicken to melt (medium oven approx. 2 min). Then place feta cheese and peppers on top. Put in medium oven for 2 min. Serve with white rice.

I like to make garlic citrus roasted chicken breasts. Easy and yummy. Use 2-3 Split breast (bone in). Place in oven safe pan. In large glass measuring cup put 1 stick of butter, 2-3 minced garlic cloves, the juice and zest from 1 orange. Place in microwave and melt. Pour over chicken. Season with salt & pepper and poultry seasoning. You can put a few extra whole cloves of garlic in pan if you want. Put in oven at about 325-350. Bake until chicken reaches 175-180 internal temp (about 45 mins - 1 hour). Baste it once or twice while it cooks. If there is not enough liquid during cooking, add a little broth or water. Remove from oven and cover until you serve.
This also works with a whole chicken. Just stuff the center with an orange, and follow above recipe.

Chicken Divan

3 chicken breast halves
1/8 teaspoon of curry
1/2 cup mayo
1 can cream of chicken soup
1 table spoon of lemon juice
1 10oz package of chopped broccoli
2 cups shredded montery jack cheese
1/2 cup of unseasoned bread crumbs

par boil chicken to just done shred chicken into bite size pieces (or cut up). Set aside.

preheat oven to 350

in a bowl mix together the curry, lemon juice, cream of chicken soup, and mayo

grease a 9 x 11 pan with butter or margarine

layer broccoli on bottom of the pan
layer chicken on top
pour wet mixture over top and spread out evenly
sprinkle cheese on top of wet mixture
sprinkle bread crumbs on top (this keeps the cheese from burning and adds a nice thin crispy crunch on top).

bake for 30 minutes or until cheese is bubbly and the bread crumbs are browned.

Creolized Stuffed Chicken Breasts

INGREDIENTS:

* 1/2 pound smoked sausage, sliced thinly
* 1/2 pound fresh button mushrooms
* 3 tablespoons chopped green onion
* 1 teaspoon minced garlic
* 4 tablespoons blue cheese salad dressing, divided
* 3 skinless, boneless chicken breasts
* 1 tablespoon Cajun-style seasoning

DIRECTIONS:

1. To Make Stuffing: Brown sausage in a large skillet over medium high heat; once sausage starts to brown, add mushrooms and saute for 5 minutes, then add green onion and garlic and saute for another 2 minutes. Remove stuffing mixture from heat, put in a food processor and add 1 tablespoon salad dressing. Process slowly in processor, roughly chopping.
2. Preheat oven to 375 degrees F (190 degrees C).
3. Cut 2 inch slits in sides of chicken breasts and stuff with as much stuffing as breast will hold. Season both sides of breasts liberally with Cajun-style seasoning and sear in a hot skillet for 1 to 2 minutes per side, then place in a lightly greased 9x13 inch baking dish. Top with leftover stuffing and remaining 3 tablespoons salad dressing.
4. Bake at 375 degrees F (175 degrees C) for 30 minutes or until chicken is cooked through and juices run clear.

artichoke chicken(Southern Style)
2TB. butter
8 boneless skinless chicken breast
2 jars marinated artichoke hearts
1 jar whole mushrooms
1/2 cup chopped onion
1/3 cup all purpose flour
1-11/2tsp. of dried rosemary crushed
1 tsp salt
14 tsp pepper

melt butter and brown chicke on both sides and place in ungreased 13x9 baking dish.
cut artichokes into quarters. arrange with the mushrooms on top of the chicken. and set aside.
saute onion in pan drippings. blend in flour,rosemary,salt and pepper until smooth.
gradually add broth, cook until thickened and bubbly. Remove from the heat and spoon over chicken. cover and bake at 350 degrees for 50-60 min. or till juices run clear. Place noodles on serving platter, top with chicken and sauce. Sprinkle with parsley. serves 8
Easy to prepare and a family favorite. Hope you enjoy. For those who do not like artichokes you can omit and add bell pepper. The red,yellow and green mix is very eye catching also adding flavor. I sometime use both.

I boiled 2 a while ago, & chopped them. I put 3 cups Minute rice, 3 Cups water in a baking dish, then spread a 10 ounce bag of frozen broccoli over top. Chicken on top of that, bake at 350 for 30 mins, spread 2 cans cheese soup over, bake 10 more mins. YUMMY!

Layered Chicken Casserol

4 large potatoes peeled and sliced
Grease casserole dish
½ potatoes layered on bottom of dish
4 Skinless chicken breast diced on top of potatoes
2 Carrots peeled and sliced
1 Leek sliced on top of carrots
425g tin of chicken soup mixed with a glass of white wine Pour over top
Rest of potatoes over top (crack some black pepper on top if you like)
Spray some garlic oil over top (we didn’t have any and it still tasted good)
1 ½ hours at 180 (do it for 2 hours will make it softer, you will have to watch it doesn’t burn)

The other option is:

Dice the chicken and marniate it in some white wine, worceistershire sauce, dash of olive oil, pinch of sugar and some mustard.

Once cooked, which won't take long serve with either rice of mashed potatoes and veges.

I suppose it all depends on what your tastes are..for me, I am into spicy tastes quite alot. try the following for 4 servings:

4 boneless skinless chicken breasts washed and all yukky bits removed.
1 bell pepper (you pick the color - I prefer red ones), sliced and halved
1 red onion sliced, then cut in half
mushrooms (if you like them - if not, omit) try portobello/portobellini, crimini, or just button mushrooms, sliced
1 big beefsteak tomato sliced and chopped
3 garlic cloves crushed or use a goodly tablespoon of the jarred or tube kind.
1 goodly tablespoon (tablespoon and a bit!) of tomato paste/puree
1 bottle beer of choice or semi dry white wine
spices needed are: salt, cracked black pepper, mild chili powder, hot chili powder, cumin powder, garlic powder, and dried cilantro (coriander leaf)

take the breasts and wash and remove and icky bits as mentioned above. cut into bite size slices and put these into a pan with some oil. then season to taste with all spices mentioned - you decide on the quantity of each. I can't tell you my measurements because I just toss it in til it seems right to me!

when the chicken is partially cooked, add the veggies, garlic and tomato puree. give it a good stir around for about a minute, then add your beer or wine (not both - it'll clash), and turn the heat down to simmer. give it a goodly stirring and then put a lid on it to let it simmer in all the juices. you can serve this over rice or even over the top of a green salad.

either one is fine and both I have tried personally and they are both good. something different! if you omitted the mushrooms, you could serve it with flour tortillas as sort of quick fajitas.

Chicken, Doritos casserole:

3-4 chicken breasts

2 bags of shredded cheese (i use mexican)

1 can cream of chicken (only add 1/2 can of water)

1/2 bag nacho cheese doritos

Cook chicken and pull apart. Layer doritos in baking dish. Put a layer of chicken, cover with cream of chicken, and sprinkle with cheese (I smother). Then repeat the layers again. After cheese is put on the second layer, put in oven (at 350) to melt cheese and get hot through middle. Once this is done put a layer of doritos on top and sprinkle with cheese . Put back into oven to melt top layer of cheese.

Mmm, it's DELICIOUS!!
