most salt is mined , sea salt is produced by evaporating sea water and recovering the salt left behind

no sea salt is made from evaporized sea water in salt farms. non-iodized salt is mined without the iodine added. they needed iodine to prevent goiters due to hyperactive thyroid glands and I believe they just continued it. They started adding the iodine over 100 years ago
