One good idea is to grill a large number of chicken breasts that have NOT been marinated - just seasoned lightly. Then you can freeze them, and thaw out individual breasts as you need them. You can cut them up cold for chicken salad, saute them for fajitas, cover them with mushroom soup and cheese in a bake, and lots of other ideas that will only take you about 5 minutes. Do the grilling once a week and your'e done!

I like to make big pots of homemade soup or chili
Jambalaya reheats very well.
Chicken pot pie is delicious and easy. Here's the fast recipe. In a large bowl mix 2 cans of cream of soup. (I usually use celery) with 2 cans of Veg-all 2 eggs and a 1/4 c. of milk. Boil two chicken breasts cut up in chunks and toss all together. Line a 10 inch deep dish with pie crust fill with mixture. Top with another crust Seal it at the edges and bake in 400 oven for about an hour or until golden brown. Let cool a bit before cuttting. This probably makes two pies

I find that a big dish of curried chicken can be used several different ways. I start by marinading it in curry powder, season salt, onion powder, fresh garlic and cayenne pepper. after this i saute it in a skillet with a little olive oil. cover and let simmer. turn frequently and add water as needed to keep from sticking. once done, you can have it over rice with sauce made from the drippings. next day have some with poatoes and a veg. slice it for sandwiches and finally chop it, add grapes, mayo, celery, apples and walnuts for a great chicken salad.

Chili, tuna salad (cold with macaroni), or scalloped potatoes and ham:
8 potatoes, peeled & sliced 2 cups diced cooked ham
1 cup thinly diced onions 1/2 stick butter or margarine
3Tablespoons flour salt & pepper to taste
milk
Put half of potatoes in large greased baking dish. Spread ham & onion pieces over. Sprinkle with flour, salt & pepper, dot with small pieces of butter. Cover with remaining potatoes. Pour in milk to about halfway up the dish. Cover and bake at 350 for 1 to 1 1/2 hours, til potatoes and onions are tender.
