I am in the UK and if I asked for "Swiss Cheese" at a delicatessen, they would ask me "which one?" So what I wanted was the name of the variety I like so I can ask for it by name,

Seems like they are called Swiss Cheese in America!

There are three that come to mind, in descending order of price, Gruyere (Swiss), Emmental (Swiss), and Norwegian Jahlsberg.

I think I can see the problem here, I am in London England and we use the names of individual varieties in the UK,

Wikipedia says:

Swiss cheese is the generic name, in the United States, Canada and Australia, for several related varieties of cheese, all of which resemble the Swiss Emmentaler. It has a distinctive appearance, as a block of the cheese is riddled with holes known as eyes.

Three types of bacteria are used in the production of Emmentaler cheese: Streptococcus thermophilis, Lactobacillus, and Propionibacter shermani. In a late stage of cheese production, P. shermani consumes the lactic acid excreted by the other bacteria, and releases carbon dioxide gas, which slowly forms the bubbles that make up the eyes. Swiss cheese without eyes is known as "blind".
