I'm trying to bake and they say to add 1 package, but all packages have different uantities. please I'm getting really frustrated.

The actual number of grams may vary. It doesn't really matter what quantity is in the particular package. It's just a starting place. The yeast is going to become active and multiply. If a recipe says to let the loaf double in size, you wait for it to double in size. It may take a bit longer with less yeast, but the smaller amount will eventually grow into the right sized population.

In fact (maybe more than you want to know): you can actually get flour to begin rising without yeast. It will take days rather than hours, but the "wild" yeast in the air will eventually begin reproducing and making the dough rise.

Just checked the package in my kitchen (Fleishman's Active Dry Yeast/Pack of 3 envelopes). One envelope is 7 grams.

a pack of yeast net wt, 1/4 oz or 7g.
